begin their

I will try to
cover every-
thing you
want to know
about getting
through the
holidays
without gain-
ing.
First, one important cor-
rection. Although veal may be
slightly lower in fat than beef,
veal is not low-fat by any
means. I do not emphasize
beef, veal or lama in anyone's
food plan.

3 medium potatoes
1 small carrot
V2 onion
2 egg whites
V8 teaspoon pepper
6 tablespoons flour
Chop potato, onion and car-
rot and blend with one cup
water (food processor works
best). Drain and mix with
other ingredients. Drop mix-
ture by large spoonfuls in a
Teflon pan or griddle sprayed
with a light amount of veg-
etable spray. Top with
unsweetened applesauce or
plain, non-fat yogurt.
Trace of fat per latke.
STRAWBERRY &
CHEESE BLINTZES
Crepe Batter:
4 egg whites
1/4 cup skim milk
2 tablespoons water
4 tablespoons all-pur-
pose flour
Filling:
3 ounces low fat ricotta
cheese plus 3
tablespoons butter-
milk
6 tablespoons dry cured
cottage cheese
2 egg whites
1 teaspoon sugar
Sauce:
2 cups fresh strawber-
ries (or frozen,
unsweetened and
thawed)
1 tablespoon lemon juice
2 tablespoons sugar
Batter: Beat egg whites,
milk and
water. Add
flour; beat
just until
smooth.
Spray a
crepe pan
with non-
stick coat-
ing. Heat
pan over
medium
heat. When
pan is hot,
spoon 2 ta-
blespoons
batter into
pan and ro-
tate pan to
spread evenly. When edges of
crepe are browned, turn crepe
onto a plate.
Filling: Place ricotta cheese
mixture, cottage cheese, egg
whites and sugar in mixer.
Blend until smooth; set aside.
Sauce: Coarsely chop
strawberries. Add lemon juice
and sugar. Toss lightly. When
ready to serve, spoon 2 table-
spoons filling into each crepe
and roll. Arrange crepes,
seam-side down on plate.
Serve immediately with fresh
fruit sauce. Makes 12 serv-
ings, 1 blintz each.

DEVILED EGGS
6 hard cooked eggs
Pepper to taste
1 1 /2 tablespoons mustard
1 1 /2 tablespoons fat free
mayonnaise
2 scallions, finely
chopped
1 tablespoon celery,
minced
1 tablespoon pimento,
minced
Paprika
Parsley
Cut eggs into halves, cross-
wise. Remove yolks, reserv-
ing the whites. Mash yolks.
Add seasoning, mayonnaise,
mustard and vegetables. Re-
fill whites making a small
mound. Garnish with papri-
ka and parsley. Makes 12
servings.
