cup dried chickpeas,
soaked at least 12 hours,
and drained
5-6 medium cloves garlic,
peeled and split
1 small onion, peeled and
quartered
2 cans (16 oz each)
chickpeas, drained
w4 cup parsley sprigs
1 tablespoon ground
coriander
1 tablespoon ground

cumin

PA teaspoons salt
1 teaspoon ground pepper

2 tablespoons all-purpose
flour

JA teaspoon baking powder
oil for frying

For Sandwiches: pita bread,
Israeli salad and Tahini sauce.
In food processor with steel
blade, grind chickpeas finely.
Turn into bowl. Finely chop gar-
lic and onion in processor and
add to chickpeas in bowl.Add
parsley, coriander, cumin, salt,
pepper, flour and baking pow-
der. Mix well with wooden
spoon. Shape falafel by press-
ing a tablespoon mixture into a
ball, then roll gently between
