to-172-inch pieces. Reserve
the rest for a later use. In a
medium saucepan, bring 1
cup of water to a boil over
moderately high heat. Add
the broccoli, cover and cook
until bright green but still
crisp, about 3 minutes. Drain,
rinse then drain again.
Transfer to a medium bowl,
add the zucchini and red pep-
per and toss. In a small bowl,
whisk the olive oil into the
balsamic vinegar. Add the
garlic, thyme, salt and hot
pepper sauce and stir to com-
bine. (The recipe can be pre-
pared to this point up to
several hours ahead.) Pour
the vinaigrette over the veg-
etables, toss to coat and
serve. Serves four.
Fat: 3 grams per serving.

Preheat oven to 425 de-
grees. In a blender or a
processor, whip ingredients
till thoroughly combined.
Pour into 9" unbaked pie
shell. Bake 15 minutes at 425
degrees. Reduce temperature
to 350 degrees and bake an
additional 50-55 minutes.
Done when toothpick insert-
ed in center comes out almost
clean. Cool. Slice and serve.

Pie Crust
112 cups sifted flour
cup safflower oil
3-4 tablespoons cold water

In a mixing bowl or proces-
sor combine flour and oil. Add
water and mix well. Roll out
dough and fit into a 9" pie
plate. Flute edges and pour
in filling.
Fat: 7 grams per 1/8 of
pie.
