1 bunch shallots, with
tops, chopped
3 tablespoons butter
3 tablespoons all-purpose
flour
1/4 cup milk
Y4 cup kosher white wine
1 can (2 oz) mushrooms
4 large gefilte fish pieces
2 tablespoons seasoned
breadcrumbs
2 tablespoons grated
Parmesan cheese
Cook shallots in butter un-
til tender but not brown. Add
flour, milk, and wine. Cook un-
til thick, stirring, about 15 min-
utes on medium heat. Add
mushrooms and cook for about
2 minutes longer.
Slice gefilte fish into V2-inch
thick slices. Line bottom of 1'/2-
quart rectangular casserole
with fish. Pour sauce over.
Sprinkle with breadcrumbs
mixed with cheese. Bake in a
400 degree oven for about 10
minutes or until cheese is
brown. Serves 4.

1 green pepper, cut in
chunks
1 stalk celery, cut in
chunks
2 cloves garlic, cut in half
'k cup diced kosher Polish
sausage
1 /4 cup olive oil
1 can (28-oz) stewed
tomatoes
Pk cups chicken broth
1 cup instant rice
1 teaspoon minced parsley
'k teaspoon thyme
1 /2 teaspoon salt
1 /2 teaspoon black pepper
'/4 teaspoon Tabasco sauce
1-3 pound fryer, cut up
1 tablespoon paprika
In food processor fitted with
metal blade, process onion, shal-
lots, green pepper, celery and
garlic until vegetables are
chopped.
Combine chopped vegetables,
diced sausage and olive oil in
4 quart casserole. Cover tight-
ly with plastic wrap, turning
