Both books are by Mildred Covert and Sylvia Gerson, Pel- ican Publishing Co. 1987 and 1993 respectively. $13.95 and $14.95 hardback 0171-STERS BENNYV1LLE 1 bunch shallots, with tops, chopped 3 tablespoons butter 3 tablespoons all-purpose flour 1/4 cup milk Y4 cup kosher white wine 1 can (2 oz) mushrooms 4 large gefilte fish pieces 2 tablespoons seasoned breadcrumbs 2 tablespoons grated Parmesan cheese Cook shallots in butter un- til tender but not brown. Add flour, milk, and wine. Cook un- til thick, stirring, about 15 min- utes on medium heat. Add mushrooms and cook for about 2 minutes longer. Slice gefilte fish into V2-inch thick slices. Line bottom of 1'/2- quart rectangular casserole with fish. Pour sauce over. Sprinkle with breadcrumbs mixed with cheese. Bake in a 400 degree oven for about 10 minutes or until cheese is brown.
