The Food Has To Be Good

he importance of a
chef/owner restaurant
can't be measured
. . . it's that big.
And when the chef is also a
fine restaurateur, you have a
mighty powerful combina-
tion.
Chuck "Rocky" Rachwitz
dreamed of one day having
his own restaurant . . . When
opportunity knocked, wishful
thinking became a reality for
Chuck Muer's executive chef.
It was like coming home for
Rocky, who started with
Chuck Muer in 1975 as his
kitchen manager on the same
site as the restaurant where
he is now the proprietor .. .
With Chuck as his partner,
Rocky opened Rocky's of Nor-
thville on W. Seven Mile just
west of Haggerty this past
Nov. 23.
He had originally opened
the locale in 1975 as Nor-
thville Charley's and even-,
tually became Chuck Muer's
top dog, responsible for menu
planning and kitchen opera-
tions for as many as 31
restaurants in six states.
When Chuck Muer took the
restaurant back from the
defunct Charley's Group to
which it had been sold, he
and Rocky got together and
reopened the present Nor-
thville dining jewel.
Owner/chefs many times
have a distinct advantage .. .
They not only know food and
its preparation but also how
it should be served and in
what kind of surroundings
that would be best conducive
for its enjoyment.
Rocky is also a working
chef/owner, an extra-
dimension asset . . . Being in
the kitchen and preparing
with authority is an all-
around confidence builder .. .
If his or her food isn't proper-
ly presented . . . and we all
know how very important
this is . . . the owner/chef as
boss can do something to in-
sure that it doesn't happen
again instead of just lamen-
ting the sad situation.
Waitpersons at Rocky's of
Northville, like smiling and
personable Cheryl Carey who
started in 1979 at the former
Northville Charley's and is
also "back home," are among
the reasons for a successful
restaurant endeavor.
The excellent preparations
of Chef Rocky require proper

presentation . . . General
Manager Leo Beil Jr., son of
Leo Beil, president of the C.A.
Muer Corp., and Rocky have
watchful eyes for this
assurance.
The decor at Rocky's of Nor-
thville was originally the
work of Chuck Muer's wife,
Betty . . . giving the at-
mosphere of a modernistic
hunting lodge with its casual
intimacy and comfortable am-
biance . . . natural wood
beams, earth tone colors, wild
life prints and tapestries,
hand carved hunting decoys,
booths with brown and tan
patterns, hardwood tables
with armchairs, fireplace
covered with fieldstone etc.
. . . You won't find too many
hunting lodges with mirrored
walls or white linen cloth at
tables and white linen
napkins.
The walls at Rocky's of Nor-
thville are a combination of
light and dark greens . . . The
new carpeting Rocky is look-
ing at will be a perfect match
. . . replacing the present red
one.
As you enter Rocky's of Nor-
thville, in front is a huge
mural of the Rocky Moun-
tains, hand painted by Diane
Sybeldon . . . She was Chuck
Muer's creative director in
the '80s when he had his own
in-house ad agency,
CAMARK . . . Ron Hoffman,
who now handles Rocky's of
Northville among others with
his own agency, R.J. Hoffman,
at that time was his director
of marketing.
The rolls made by Chef
Rocky are his own invention
. . . with kosher salt, virgin
olive oil and poppy seeds .. .
Also the strange but delicious
salad concoction of Vidalia
onion, pineapple and tomato
. . . If you never thought they
would go well together you're
not alone — neither did many
others who have since become
believers.
Seating is 217 at Rocky's of
Northville . . . with an out-
door patio now open for
aboout 30 more.
As would be expected, the
big thing is fish and seafood
. . . But pasta is also a heavy
seller and rack of lamb a
large favorite . . . Potato en-
crusted whitefish is a Rocky
Rachwitz signature dish to go
along with a bevy of delights
from sea and land.

Rocky's of Northville is
open seven days a week .. .
lunch Monday-Saturday,
11:30 a.m.-4 p.m.; dinner
Monday-Thursday, 4 p.m.-10
p.m.; Friday and Saturday to
11 p.m. and Sunday until 9:30
p.m. . . . It is more than just
another restaurant because of
its chef/owner operation.
The teamwork Rocky
Rachwitz and Leo Beil Jr.
have welded together with
their employees is a main
pointer of success . . . If hard
work and a fervent aim to
please are indicators, then
Rocky's of Northville can
stand very tall.
COULD BE A gold fashion
show at the 50th anniversary
celebration by Michigan
Cancer Foundation this Sun-
day at the Westin with pro-
bably one of the largest
crowds on hand to attend the
MCF dinner.
Many gals may be wearing
gold . . . but I wonder how
many men would dare wear a
