ISRAELI NUSSE
STRUDEL FILLING

COTTAGE CHEESE
STRUDEL FILLING

2 cups walnuts or
pecans, coarsely
chopped
'/2 cup raisins
'/2 cup white sugar
1 scant Tbsp. thin honey
2 tsps. grated lemon rind
Apricot or other tart jam
to spread on dough
1 egg yolk mixed with 1
tsp. cold water to
glaze dough

2 egg yolks
'/4 cup sugar
1 /4 tsp. salt
1 lb. dry cottage cheese
1 /4 cup raisins
'/2 tsp. vanilla
'/2 tsp. grated lemon peel
Beat yolks, sugar and salt un-
til thick and pale. Add cottage
cheese gradually to mixture,
beating after each addition.
Stir in mixture of raisins,
vanilla and lemon peel.
Spread on prepared strudel
dough.

CHERRY STRUDEL
FILLING

2 cans (1 lb. 4 oz. each)
pitted, tart, red
cherries, drained
3 /4 cup chopped toasted
blanched almonds
1 cup sugar
1 /2 tsp. cinnamon
Place cherries between
layers of paper towels and
gently pat to remove excess li-
quid. Combine almonds, su-
gar and cinnamon with cher-
ries. Place on strudel dough,
roll and bake.

Mix first three ingredients
in a small saucepan and heat
until sugar is dissolved. Add
pineapple. Stir and cook un-

free kosher recipe booklet to
their Jewish consumers look-
ing for new twists on tradi-
tional holiday favorites.
The booklet gives a brief
description of each holiday,
foods that are usually eaten
during that time and a recipe
following. Consumers can get
their free booklet by writing
to:

Following are a few recipes
from the booklet:

moisten. Chill dough one
hour. Prepare filling: Bring
apricots, water and sugar to
a boil. Simmer slowly,
uncovered, 5 minutes. Cool 1/2
hour. Puree mixture. Roll
dough on floured work
surface to 1/4-inch thickness.
Cut our 3-inch circles. Spoon
tablespoon of filling in center
of circles. Fold dough
partially over filling in three
places to form triangle. Pinch
points to seal dough. Bake 15
minutes on greased cookie
sheet. Makes 30.

APRICOT
HAMANTASHEN
1 /2 cup + 2 Tbsp.
granulated sugar
3 /4 cup margarine
1% tsp. baking powder
1 egg
1 egg white
1% tsp. vanilla extract
23/4 cups all-purpose flour

SESAME TRUFFLES
(Mock Halvah)
1 cup tahini (sesame
spaste)
6 cups confectioner's
sugar
In a food processor, blend
tahini until smooth. Add 2 to
21/2 cups confectioner's sugar.
Process to combine, about 30
seconds. Mixture should be a
thick paste. Add more sugar
or a few drops vegetable oil to
achieve proper consistency.
Place remaining sugar in a
small pan. Roll rounded tea-
spoonfuls of tahini mixture
into 1/2-inch balls. Roll in con-
fectioner's sugar to coat. Chill
3 hours. Remove from sugar
to serve. Makes 25.

FILLING:
1 cup dried apricots
3 /4 cup water
1/2 cup granulated sugar
Preheatoven to 350
degrees.
Prepare pastry: Combine
sugar and margarine; beat
until creamy. Add baking
powder. Mix in egg, egg white
