espite all the obsta-
cles that confront res-
taurateurs today, a
prime reason for fall
off of business is often pegg-
ed to the owner or owners
whom customers expect on
the scene . . . All too often the
owner is diverted by other in-
terests and in effect delegates
almost the entire restaurant
operation to others.
This is not the case in din-
ing spots such as the new
American Inn Restaurant on
Middlebelt between Five and
Six Mile, or Sila on 12 Mile,
east of Greenfield, where an
owner is on the premises at
all times.
Either Angelis Anastasiou,
who also owns Dimitri's of
Farmington on Grand River,
which he opened in 1989, wife
Susan, or partner Chris
Kanis is at American Inn
Restaurant seven days a week
. . . Same with Mike and Al
Bsharah at Sila.
There is simply no
substitute for an owner in
restaurants that are not
chains . . . Customers like to
be greeted personally and by
the top person . . . This means
more than a menu offering
the latest trendy items or a
waiter fussing over a
customer's likes and dislikes.
Back in 1970-71 when he
attended Hotel & Restaurant
Culinary School in Athens,
Greece, Angelis learned that
what it takes to win in the
restaurant game, among
other things, is the steady
hands of on-the-premises
owners who are on the floor at
every possible opportunity.
Chris is at American Inn
Restaurant from noon to clos-
ing and Angelis, lunch to din-
ner . . . Lisa Miesel is
manager from 10 a.m. to 8
p.m.
It was formerly a bar and
eatery which Angelis and
Chris almost completely gut-
ted and made into a thorough
family restaurant, with park-
ing for about 100 cars .. .
American Inn restaurant,
with its airy atmosphere in a
free-standing building, open-
ed June 15 of this year
seating 150 and eight at the
bar.
Its intimacy is on two levels,
with brass railings, brass
posts, etched glass mirrors,
hanging glass dividers,
booths and tables . . . The food
is all homemade with Angelis
himself making the soup on
Mondays . . . Other days, Chef
Otto Zigouris makes the
soups as well as preparing the
many menu items that en-
compass a wide variety of
lunch and dinner dishes .. .
Otto was chef when Angelis
opened Dimitri's of Farm-
ington and is now at
American Inn Restaurant.
Angelis is no stranger to
the dining business, working
at the Old Parthenon and
opening the original Pegasus
in Greektown .... He and
Chris worked together at
both places.
A highpoint is when the
basket of hot rolls is brought
to the booth or table . . . Years
back, Ernie DeMichelle, now
at Ernesto's showed him how
to make bread and Angelis
joins others at American Inn
Restaurant in homemade
bread making.
Hands-on ownership and
management in restaurants
is all-important . . . There just
isn't anything to take its
place . . . Some may think
that an owner who slices
roast beef, supervises the
cleaning of his kitchen and
makes sure the salt and pep-
per shakers are set properly
lacks dignity . . . But that's
just what it takes to succeed
and I call it competency .. .
Sure, owners like Angelis and
Chris at American Inn
Restaurant or Mike and Al at
Sila can't do it all by
themselves and must know
how to delegate . . . Never-
theless, they should maintain
a strong personal presence in
order to make the operation
work.
Having a competent person
like Lisa Miesel at American
Inn Restaurant is extremely
important also . . . She knows
how the boss wants it done
and what to do.
The ownership and
employee relationship must
be a good one . . . It translates
to the satisfaction of many
customers . . . American Inn
Restaurant and Sila among
others put together good food
with proper service and on-
the-premises ownership to
make for a combination that
invariably wins.
