2 cups cranberries,
rinsed and
coarsely chopped
CAKE:
1 /4 cup vegetable
shortening
1 /2 cup sugar
1 egg
1 /2 teaspoon vanilla
extract
1 cup sifted cake flour
1 1/2 teaspoons baking
powder
1 /2 teaspoon salt
1 /a cup milk
1. Heat oven to 350 degrees.
2. For topping, combine veg-
etable shortening, % cup
sugar and vanilla extract.
Spread mixture evenly in a
greased 8x8x2-inch pan. Top
with chopped cranberries.
Sprinkle remaining 1/3 cup
sugar over cranberries.
3. For cake, blend vegetable
shortening, sugar, egg and
vanilla extract in large mixer
bowl.
4. Combine cake flour,
baking powder and salt. Add
to creamed mixture alter-
nately with milk, mixing
until blended after each
addition. Pour batter evenly
over cranberries.
5. Bake at 350 degrees. for
40 minutes or until a
toothpick inserted in center
comes out clean. Cool for 5
minutes in pan. Invert onto
serving plate. Remove pan. 9
servings.
PUMPKIN WALNUT
POUND CAKE
1 1/4 cups granulated
sugar
1 cup firmly packed
brown sugar
1 1/4 cups vegetable
shortening
4 eggs
1 can (16 ounces)
pumpkin
2 34 cups unsifted
all-purpose
flour
4 teaspoons pumpkin pie
spice
2 teaspoons salt
2 teaspoons baking soda
1 cup chopped walnuts
Glaze
1 /2 cup confectioner's
sugar
2 teaspoons milk
1 /4 teaspoon vanilla
1. Heat oven to 350 degrees.
Grease and flour 12-cup
fluted ring pan. Set aside.
2. For cake, combine gran-
ulated sugar, brown sugar,
vegetable shortening and
eggs in large bowl. Beat 2
minutes at medium speed of
electric mixer. Blend in
pumpkin. Combine flour,
spice, salt and baking soda.
Blend into pumpkin mixture.
Beat at high speed 2 minutes.
Stir in nuts. Pour into
prepared pan.
3. Bake at 350 degrees for
55 to 60 minutes or until a
toothpick inserted in cake
comes out clean. Cool 15
minutes. Remove from pan.
Cool completely.
4. For glaze, combine
confectioner's sugar, milk and
vanilla. Stir until smooth.
Drizzle over cooled cake. 12
servings. ❑

The Jewish Community
Center, The Jewish News,
Sinai Hospital and the Helen
L. De Roy Foundations will
present the second annual
Community-Wide Special
Needs Awareness Day 1-4
p.m. Nov. 1 at the Maple-
Drake building.
This program will feature
television actress Linda Bove,
who plays "Linda the
librarian" on "Sesame
Street." Ms. Bove will present
a children's performance
"Sign Me a Story."
Four workshops and a
resource fair are also sched-
uled. The Resource Fair will
be open throughout the after-
noon and will feature 25
organizations which serve in-
dividuals with disabilities.
Workshops, 1:45-2:30 p.m.,
are "Self-Help Through Sup-
port Groups" and "What Can
the Americans with Disa-
bilities Act Do For Me?"
Workshops 3:15-4 p.m. are
"Parenting Children with
Special Needs" and "Coping
with Disabilities Later in
Life."
Tickets are available at the
Center. Sign interpretation
and child care services will be
available with an advance
reservation by Oct. 28. For in-

Project Talmud
At Bais Chabad
Project
Talmud
fall
semester of Bais Chabad
Torah Center will begin 9:45
a.m. Oct. 25 with a beginners
course on Talmud.
At 11 a.m., a course on
Jewish Mysticism will be
given for beginners and in-
termediates. The text that
will be used is Taaya. The
mysticism class is also offered
on Thursday nights 8 p.m.
beginning Oct. 29.
