International Lunches

Continued from Page 94

Heat oven to 375 degrees F.
Bake until breads are lightly
browned about 45 minutes.
Transfer to wire racks to cool
slightly. Cut wedges for the
lunch box.

PANTRAS
from The Varied Kitchens of
India
Cut the top off the egg and
empty the shell of its con-
tents. The empty shell is used
to measure the batter and
pour it into the frying pan.
Stuffing:
1 tablespoon corn or
peanut oil
1 cup fine-chopped
onions
1 pound ground beef
1 /2 teaspoon crushed fresh
gingerroot
1 /2 teaspoon crushed
garlic
1 /4 teaspoon dried hot red
chili flakes (optional)
1/2 cup chopped fresh
coriander
1 teaspoon garam masala
(combination of
pepper, clove,
cardamom,
cinnamon, cumin
seed, coriander and
turmeric are ground
and packaged)
Saute onions in oil over

moderate heat for 2 minutes.
Add beef and other stuffing
ingredients. Stir-fry 5
minutes.

Pancakes (crepes):
11/2 cups flour
2 cups cold water
1/4 teaspoon salt
1 egg, beaten
corn or peanut oil
Mix pancake batter until
smooth. Batter will be thin.
Lightly oil crepe or non-stick
skillet. Pour about 1/4 cup bat-
ter (egg shell), tipping so bat-
ter spreads evenly. Fry one
side over low heat and turn
out on a cloth towel. Use all
batter.

To prepare:
1 egg, beaten, 1 cup
toasted fine bread
crumbs, 1 cup oil
Place a heaping tablespoon
of beef mixture on end near-
est you, roll over once, fold the
side in toward the middle and
complete the roll. Dip the
pantras into beaten egg and
roll in crumbs. Heat oil in a
skillet and brown them over
moderate heat for about 3
minutes. Drain on paper
towel. Heat, wrap and ready
to eat at room temperature
for lunch. Makes 8 to 10.
