PANTRAS from The Varied Kitchens of India Cut the top off the egg and empty the shell of its con- tents. The empty shell is used to measure the batter and pour it into the frying pan. Stuffing: 1 tablespoon corn or peanut oil 1 cup fine-chopped onions 1 pound ground beef 1 /2 teaspoon crushed fresh gingerroot 1 /2 teaspoon crushed garlic 1 /4 teaspoon dried hot red chili flakes (optional) 1/2 cup chopped fresh coriander 1 teaspoon garam masala (combination of pepper, clove, cardamom, cinnamon, cumin seed, coriander and turmeric are ground and packaged) Saute onions in oil over moderate heat for 2 minutes. Add beef and other stuffing ingredients. Stir-fry 5 minutes. Pancakes (crepes): 11/2 cups flour 2 cups cold water 1/4 teaspoon salt 1 egg, beaten corn or peanut oil Mix pancake batter until smooth.
