EAT SMOKED FISH LIVE BETTER
Wash the potatoes; if de-
sired, pare away a strip of the
peel to reveal a band of potato
pulp around the middle. This
is especially nice when you
combine a few different colors
of new potatoes. Wash pota-
toes under cold water and
place in a saucepan covering
with cold water by about 2
inches. Remove the potatoes
and bring the water to a boil.
Add the potatoes and cook un-
til tender when pierced with
small sharp knife, about 10 to
20 minutes. Drain and set pot
with potatoes over heat.
Shake the pan until moisture
evaporates and potatoes are
dry. Toss with melted
margarine and sprinkle with
the herbs. Serves 6.

V2 cup flour
1 /2 tsp. salt
1/8 tsp. pepper
Yz tsp. paprika
1 /2 cup margarine
4 medium onions, cut
into eighths
1 cup chicken broth
3 cups dry white wine
fresh thyme, parsley,
rosemary, about 1 tsp.
each, chopped
1 bay leaf
1 cup thickly sliced
mushrooms
2 Tbsp. Madeira wine or
burgundy

4 salmon steaks (or filets
to equal about 1 1/2
lbs.)
1/8 tsp. salt
1/8 tsp. pepper
2 Tbsp. margarine
1 /4 cup white wine
1 tsp. fresh tarragon,
finely chopped
2 Tbsp. lemon juice
Rub margarine into sal-
mon. Mix remaining ingre-
dients and pour over fish.
Bake, uncovered, at 450 ° for
10 minutes per inch. Serves 4.

2 tsp. toasted sesame
seeds
2 Tbsp. fresh chopped
parsley
1 tsp. mixed fresh
chopped herbs of
choice
1 large clove garlic,
crushed
8 oz. cream cheese,
softened
1 cup ricotta or fine
cottage cheese
1 tsp. red wine vinegar
Mix flour with salt, pepper
and paprika. Dredge chicken
in flour mix and brown on
both sides in frying pan.
Remove chicken to a casse-
role. Add the onions to the
margarine and fry until bare-
ly brown. Add broth, white
wine and seasonings. Boil un-
til mixture decreases by one
half. Pour mixture over
chicken. Add mushrooms and
bake at 350° for about 45
minutes or until chicken is
done. Boneless chicken may
be used instead of fryers. Add
the Madeira just before serv-
ing and cook 5 to 10 minutes
more. Serves 6.0
