This is especially nice when you combine a few different colors of new potatoes. Wash pota- toes under cold water and place in a saucepan covering with cold water by about 2 inches. Remove the potatoes and bring the water to a boil. Add the potatoes and cook un- til tender when pierced with small sharp knife, about 10 to 20 minutes. Drain and set pot with potatoes over heat. Boil un- til mixture decreases by one half. Pour mixture over chicken. Add mushrooms and bake at 350° for about 45 minutes or until chicken is done. Boneless chicken may be used instead of fryers.
