6. 'Ib assemble, place one
layer on serving plate. Ar-
range half of strawberries
over top. Spoon half of whip-
ped cream over berries. Top
with other layer. Spread re-
maining whipped cream over
top. Spoon on remaining ber-
ries. To serve, cut into 8
wedges. 8 servings.
Note: For individual short-
cakes, roll dough to Y2-inch
thickness on lightly floured
surface. Cut with floured
3-inch round cutter. Place 2
inches apart on ungreased
baking sheet. Bake at 425
degrees F. for 11 to 13
minutes, or until ightly
browned. Cool. Split short-
cakes using fork. Fill with
strawberries and whipped
cream, and spoon extra cream
and berries over top.
POUND CAKE
Cake
% cup dairy sour cream
3 eggs
11/2 cups all-purpose flour
1 /4 t. salt
1 /4 t. baking powder
1/8 t. baking soda
% cup vegetable
shortening
1 cup sugar
1 t. vanilla
2 T milk
Raspberry Sauce
(Optional)
1 package (10 ounces)
frozen raspberries,
thawed
3 T sugar
2 t. cornstarch
Fresh. raspberries
1. Let sour cream and eggs
stand at room temperature
for 30 minutes. Heat oven to
325 degrees F. Grease
8 1/2x41/2x2 1/2 or 9x5x3-inch
loaf pan with shortening.
Flour lightly. Combine flour,
salt, baking powder and bak-
ing soda. Set aside.
2. Beat shortening in large
bowl at medium speed of elec-
tric mixer 30 seconds. Add
sugar, 2 T at a time, beating
at medium to high speed
about 10 minutes total, until
very light and fluffy.
3. Add vanilla. Add eggs,
one at a time, beating at low
to medium speed for one
minute after each addition
and scraping sides of bowl
often. Combine sour cream
and milk. Add flour mixture
alternately with sour cream
mixture, beating at low speed
just until combined. Spread
batter in pan.
4. Bake at 325 degrees F. for
60 to 75 minutes or until
toothpick inserted in the
center comes out clean. Cool
on cooling rack 10 minutes.
Remove from pan. Cool com-
pletely on a cooling rack.
5. For optional sauce, com-
bine raspberries, sugar and
cornstarch in medium
saucepan. Cook and stir until
thickened and bubbly. Cook
and stir 2 minutes more.
Press through fine sieve.
Discard seeds. Cover and
chill. Serve with fresh
raspberries over cake. 10
servings.
Note: Strawberries can be
substituted for raspberries.

Celebration noon May 4 in
Shiffman Hall of the Maple-

ment and folk dancing. There

Housing Forum
For Older Adults
Jewish Family Service will
sponsor a free community
forum on housing alter-
natives for Jewish older
adults 7-8:30 p.m. May 20 at
the Jewish Family Service.
The issues to be discussed
include housing options
available in the Jewish com-
munity, housing costs, fears
and concerns in the relocation
process.
Presenters for the evening
will be Jan Bayer, co-program
manager Group Apartment
for the Elderly Program; Iris
Mickel, adthinistrator, Jewish
Federation Apartments; Ar-
nold Budin, agency director,
Jewish Home for Aged; Mar-
cia Mittleman, administrator,
Prentis Manor. The facilitator
will be Judy Kotzen, super-
visor, Senior Services Depart-
ment, Jewish Family Service.
