TINY TURKEY
KNAIDLACH
8 oz. ground turkey
1 /4 cup parsley sprigs,
chopped
1 egg
% cup matzah meal
Y2 teaspoon salt
1/2 teaspoon ground
nutmeg
1/8 teaspoon pepper
In bowl, combine turkey,
parsley, egg, matzah meal,
salt, nutmeg and pepper.
Chill at least 2 hours (or over-
night.) Roll into small balls,
1-inch diameter. Drop gently
into pot of boiling water and
cook for 5 to 7 minutes until
cooked in center. Makes 22 to
24. May be made ahead.
Reheat by pouring 1/2 cup
water around, cover with
plastic wrap and heat in
microwave at High for 1 1/2-2
minutes. To serve: Place 2 to
3 in each soup bowl and ladle
tomato broth over.

TOMATO BROTH
1 medium onion, thinly
sliced
1 tablespoon peanut oil
4 tomatoes, coarsely
chopped
2 tablespoons fresh basil,
chopped or 2
teaspoons dried
2 quarts prepared or
canned chicken broth
In large pot, saute onion in
hot peanut oil until wilted, 3
to 4 minutes. Add tomatoes,
basil and broth and bring to
boil. Lower heat to simmer.
Cover and cook 10 minutes.
Serve poured over Tiny
Turkey Knaidlach. Serves 8.

CHICKEN) POLO
2-11 oz. packages dried
mixed fruits
11/2 cups orange juice
21/2 pounds cubed lamb,
fat-trimmed, or
chicken
1 /4 cup peanut oil
3 red onions, cut in thin
wedges
16 oz. can stewed
tomatoes
V2 cup dry white wine,
kosher for Passover
1 tablespoon honey
1 teaspoon turmeric
1 teaspoon coriander
1 teaspoon cumin
salt and pepper
1 /4 cup pistachio nuts for
garnish
Place dried fruits in shallow
microsafe dish and pour
orange juice over. Cover with
plastic wrap and heat at High
for 2 minutes. Set aside. In
12-inch skillet, brown lamb or
chicken in hot oil. Remove
from pan and set aside. Saute
onions in same skillet.
