oney has been the
symbol of sweetness
since antiquity, long
before man discovered how to
produce sugar from cane and
beets, and is mentioned in
almost every book of the Bi-
ble. In the Song of Songs
(4:11), the bridegroom gives
his bride the ultimate compli-
ment — "Your lips drop
sweetness like the
honeycomb."
Rocky Rak, 35, has been
keeping bees for the past 15
years. He lives on
Mahmanim, a small com-
munity settlement in the
Galilee and has 25 hives,
from which he produces seven
tons of honey annually. In a
storeroom attached to his
house he separates the honey
from the combs and, like most
beekeepers, does his own
packaging and labeling. Kib-
butz Yad Mordechai, near
Ashkelon is the largest honey
producer in Israel, with over
3,000 hives, and even here the
entire process takes place on
the kibbutz.
While bees in central Israel
gorge themselves on nectar
during the citrus season, pro-
ducing vast amounts of honey,
they have to travel long
distances to gather nectar the
rest of the year. Says Mr. Rak,
"The Galilee is especially
good for bees because there
are different flowers at dif-
ferent seasons and by moving
the hives around I can pro-
duce a variety of honeys."
In the spring, for example,
Mr. Rak takes his hives, with
the aid of a truck and crane,
to citrus orchards, then to ap-
ple, pear and avocado or-
chards. In the summer he
moves them to the hills near
Safed, where wildflowers,
among them hyssop (za'atar),
a herb in the marjoram fami-
ly which is abundant in the
hilly country, are prolific. In
the fall he moves them to the
valleys, where the bees gather
nectar mainly from Elecam-
pane, a plant with small star-
shaped flowers, sticky leaves
and a pungent scent and in
the winter they are brought
to the shores of the Kinneret,
where the spring flowering
begins earlier than in the
hills.
Citrus honey makes up
about 70 percent of Israel's
honey production, and being
light, very sweet and with a
delicate taste, is easily the
most popular variety of

honey. Avocado and eucalyp-
tus honeys are much darker
and stronger tasting and
hyssop honey is slightly sour.
Wildflower honeys differ
markedly, depending where
and when the nectar has been
gathered.
Jews began to keep bees
during the Talmudic period
and today in Israel there are
some 750 professional
beekeepers with about 70,000
hives, most of them in the
central part of the country.

gressive and not very prolific

all year without having to be
fed artificially. With the foun-
ding of the State of Israel and
the development of a commer-
cial honey industry, an
Italian variety was imported.
It gives higher yields and is
more tranquil, but it is also
more susceptible to disease
and has to be fed sugar-water
in winter.
Queen bees are raised and
artifically inseminated, but
they are expensive, so many
beekeepers buy a small
number of queens, raise their
daughters as queens and let
them mate naturally with
wild Syrian males. The first
generation crossbreed has the
best qualities of both
varieties, but if allowed to
continue to breed naturally,
the bees revert back to the
Syrian variety. New queens
have to be brought in on a
regular basis.
