POTATO LATKES

• 4 pounds potatoes, peeled,
cut into 2-inch chunks
• 1 small onion, cut into wedges

• 3 eggs, slightly beaten
• t.0 cup dry bread crumbs
• 1 teaspoon salt

• Oil
• Raspberry Cinnamon Applesauce
(See recipe on right)
• BREAKSTONE'S Sour Cream

Place potatoes and onion, in small batches, in food pro-

cessor container fitted with steel blade or in blender; cover.
For each botch, process with on-off pulses until potatoes
are coarsely chopped. • Stir eggs into potato mixture. •
Spoon into large colander to drain. Sprinkle bread crumbs
over mixture. Let stand 10 to 15 minutes. stirring

occasionally.
Place potato mixture in large bowl; stir in salt. • Heat

4 inch oil in large skillet.
cupfuls of potato mixture into hot oil,
• Spoon scant
pressing lightly to flatten. • fry 3 to 4 minutes on each
side or until golden brown. Drain on paper towels. Place
on ovenproof plotter; keep warm in oven. Repeat with re-
maining potato mixture. Serve with Raspberry Cinnamon

Applesauce and sour cream. Makes about 2 dozen.

Prep time: I hour
Cooking time: 40 minutes

• 1 package (10-ounces)
BIRDS EYE Red Raspberries
in Lite Syrup, thawed

• 4 pounds tart cooking apples,
peeled, cored, coarsely chopped

• sugar (optional)

Place raspberries, cinnamon and apples in Dutch oven.

Bring mixture to boil. Reduce heat to low; cover. Sim-

mer 15 to 20 minutes or until tender. stirring occasional-
ly. Stir in sugar to taste, if desired. Remove cinnamon

sticks. Refrigerate. Makes 6 cups.
Prep time: 15 minutes plus refrigerating

Cooking time: 20 minutes
