1 cup sugar
11/2 pounds apples,
peeled, halved, cored
and diced
3/4 cup plus 2 tablespoonS
(13/4 sticks) unsalted
nondairy margarine
or butter
2 large eggs
2 cups all-purpose flour
11/2 teaspoons baking
powder
1 cup pecans, coarsely
chopped
Topping:
2 large apples (about 1
pound)
2 tablespoons ( 1/4 stick)
unsalted nondairy
margarine or butter,
melted
7 tablespoons sugar
2 teaspoons ground
cinnamon
Preheat oven to 400F. Mix
cinnamon and 1/2 cup sugar in
a large bowl. Add apples and
mix. In another bowl beat
margarine until smooth. Add
remaining 1/2 cup sugar and
beat until fluffy. Add eggs one
by one, beating well after
each addition. Sift flour with
baking powder and stir . into
egg mixture. Stir in apple
mixture and pecans. Spread
in a greased 13 by 9-inch bak-
ing dish with 2-inch high
sides. Smooth top.
Peel, halve, and core apples
and cut into thin slices. Lay
slices in overlapping rows to
cover cake completely. Brush
slices with melted margarine.
Mix sugar and cinnamon and
sprinkle evenly over top. Bake
for 1 hour or until apples are
very tender. Cool in pan on a
rack. (Cake can be kept, cov-
ered, for 3 to 4 days in refrig-
erator.) -
To serve, cut cake into
squares and serve at room
temperature. Makes 16 to 20
servings.

Association Hosts
Chocolate Jubilee

The sixth annual Al-
zheimer's Association Choco-
late Jubilee will be held Nov.
24 at the Ritz-Carlton, Dear-
born. Over 30 chocolatiers
will show their creations and
give out free samples.
A patron brunch will be
held at noon, prior to the
Jubilee. Patrons will have a
pre-showing of the Jubilee.
