or water to make a soft
dough. Refrigerate while
making filling.
To make filling: Place dates
and tea in small saucepan.
Cook over low heat, stirring,
until dates have softened in-
to a paste. Cool before using.
Preheat oven to 350F. Grease
and flour a baking sheet. Cut
pastry into 3 pieces and roll
each as thinly as possible in-
to a rectangle. Spread each
rectangle with one-third date
mixture leaving about 1/2-inch
pastry border. Roll up as for
jelly roll. Cut diagonally into
1-inch thick slices. Place on
prepared baking sheet and
prick top lightly with fork.
Bake in preheated oven for 20
to 25 minutes. Do not brown
on top. Cool, then roll in con-
f ectioner's sugar. Makes 40.
Note: Ma'amoul may be
shaped into little tartlets by
baking in miniature muffin
pans. Chopped pistachios or
mixed nuts tossed in a little
sugar may be used as another
filling.
GLAZED SUGAR
ALMONDS AND
PISTACHIOS
(Badam sookhteh)
1 cup sugar
Ph cups whole almonds,
shelled
'/2 cup pistachios, shelled
Oil a baking sheet. Place
sugar in medium-sized heavy
bottomed pan, preferably non-
stick. Heat over medium
heat. As soon as sugar begins
to melt, stir often. As sugar
melts and changes color, stir
constantly to make a
caramel-colored, smooth mix-
ture. Turn off heat but do not
remove pan from stovetop.
(Mixture will harden and
make it impossible to work
with.) Add almonds and pis-
tachios and stir gently to coat
)= with caramel mixture. Drop
by spoonfuls onto prepared
baking sheet. When cool and
hardened, store in airtight
container. Makes 12 to 15
pieces.
Note: A combination of
walnuts, pecans or other nuts
may be substituted but in-
clude some pistachios for
their bright green color. ❑
