Cut pastry into 3 pieces and roll each as thinly as possible in- to a rectangle. Spread each rectangle with one-third date mixture leaving about 1/2-inch pastry border. Roll up as for jelly roll. Cut diagonally into 1-inch thick slices. Place on prepared baking sheet and prick top lightly with fork. Bake in preheated oven for 20 to 25 minutes. Do not brown on top. Cool, then roll in con- f ectioner's sugar. Makes 40. Note: Ma'amoul may be shaped into little tartlets by baking in miniature muffin pans. Chopped pistachios or mixed nuts tossed in a little sugar may be used as another filling. GLAZED SUGAR ALMONDS AND PISTACHIOS (Badam sookhteh) 1 cup sugar Ph cups whole almonds, shelled '/2 cup pistachios, shelled Oil a baking sheet.
