Club, which won third
place in the Tabasco National
Community Cookbooks com-
petition, is a surprise. The
authors, a group of accomp-
lished women from Crown
Heights, Brooklyn, have pro-
duced a highly professional
book combining in-depth ex-
planations of kashrut obser-
vance, Jewish custom and
over 800 tested traditional
and sophisticated recipes for
today's kosher kitchen.
In a telephone interview,
Esther Blau, one of the three
women on the editorial board,
says that the first Spice and
Spirit was published in 1977,
when they were all under 25
years old. "Now, we all have
large families — Cyrel
Deitsch and Cherna Light
each have 12 children and I
have 11 — and for Shabbat
and holidays we might have
10 to 15 extra guests," she
says.

taking into account the fast-
growing number of kosher

today. More than 30 percent
of packaged foods are now cer-

from a strictly observant
point of view. The Jewish
community at large may not
agree and adhere to every
piece of information,, but the
book is an excellent theore-
tical reference and practical
joy.
The Table of Contents is di-
vided into 12 chapters, each
crammed - with information.
Under "Kashrut: Spiritual
Nutrition" comes the funda-
mentals of kashrut, how to set
up a kosher kitchen, rec-
ognizing kosher products and
blessings over food.
The book's layout is easy to
read, directions are concise
and clear enough for even a
new cook to follow. Size of con-
tainer and yield are noted
under list of ingredients in
each recipe so that the cook
knows exactly what's needed.

ORANGE-WALNUT
PANCAKES
1 cup flour
% teaspoon baking
powder
% teaspoon salt
1 egg
1 cup milk
2 tablespoons oil for
frying
Sauce:
1 tablespoon margarine
2 cups orange juice
1/2 cup sugar
1/2 teaspoon cinnamon
1 /4 cup raisins
1/2 cup chopped walnuts
% cup fine strips orange
rind
Combine all dry ingre-
dients. Beat egg and milk un-
til thoroughly blended. Add to
dry ingredients. Lightly oil
10-inch skillet and heat until
hot. Using 2 tablespoons bat-
ter, drop onto hot skillet.
