breads, do not require knead-
ing or rising, and most take
only minutes to prepare.
Some of the quick breads can
be prepared a day or two
ahead of time.
Quick breads make wonder-
ful house warming and holi-
day gifts and will bring varie-
ty to any pot luck dinner or
bake sale.

CARROT WALNUT
BREAD
2 cups all-purpose flour
1 cup chopped walnuts
1 /2 cup granulated sugar
1 /2 cup brown sugar,
packed
3 teaspoons baking
powder
1 teaspoon ground
cinnamon
teaspoon salt
2cups finely shredded
fresh carrots
1 /2 cup milk
Y3 cup vegetable oil
1 egg
Preheat the oven to 350° F.
Grease and flour one 9 1/2 x
5 1/2-inch loaf pan or three 5 3/4
x 3 1/2-inch loaf pans.
In a large mixing bowl,
combine the flour, nuts,
sugars, baking powder, cin-

namon, and salt until well
blended. Stir in the remain-
ing ingredients just until
moistened. Spoon into pan or
pans. Bake 50 to 60 minutes
for a large loaf, 35 to 45
minutes for small loaves, or
until they test done. Cool in
the pan for 10 minutes, then
turn out onto a rack to finish
cooling.
Makes one large or three
small loaves.

HERBED IRISH
SODA BREAD
3 cups all-purpose flour
1/2 teaspoon salt
2% teaspoons baking
powder
ih teaspoon baking soda
2 tablespoon sugar
1 teaspoon dried or fresh
thyme
2 tablespoons butter
1 egg
3 /4 cup buttermilk
Preheat the oven to 375° F.
Grease an 8-inch round cake
pan or pie pan.
In a large bowl, stir
together the flour, salt, bak-
ing powder, soda, sugar, and
thyme. With a fork or pastry
blender, cut the butter into
the dry ingredients until
crumbly. In a small bowl, mix
the egg and buttermilk, then
stir into the dry ingredients.
Turn out onto a lightly
floured board and knead un-
til smooth, 2 to 3 minutes.
Shape into a smooth round
loaf. Press into the prepared
baking pan. With a sharp
knife, cut a long X on top of
the loaf. Bake 35 to 40 min-
utes, or just until golden.
Makes one 8-inch round
loaf. ❑

Apricots Are A
Sweet, Juicy lireat

One of the best parts of
summer is nature's bounty of
fresh fruit. Sweet, juicy apri-
cots, fresh from orchards, are
plentiful.
A traditional cobbler is one
way to savor apricots. Cob-
blers originated during the
Pilgrim days and have been a
favorite ever since. The popu-
larity of this easy dessert
gives it a place in American
history.

APRICOT-NUT
COBBLER
6 cups fresh apricot
halves (2 pounds)
3 /4 cup sugar
2 tablespoons flour

/2 teaspoon cinnamon
/4 cup all-purpose flour
1% teaspoons baking
powder
1 /4 teaspoon salt
1 /4 cup unsalted butter or
margarine, softened
1 /2 cup chopped walnuts
1 /4 cup non-fat milk
Preheat oven to 425° F. In a
large bowl, combine apricots
and next 3 ingredients; pour
mixture evenly into un-
greased 11" by 7" by 1.5"
glass dish. In a medium bowl,
combine flour and next 3 in-
gredients. With a pastry
blender or two forks, cut in
butter until mixture resem-
