y friend Bunny is a
creative soul. She
doesn't have a lot of
time to cook but when she
does, she skillfully combines
ingredients you never
thought would go together.
During a recent phone chat,
she mentioned fixing the
most wonderful French toast.
"On a low cholesterol diet?"
I screamed. The good taste,
she assured me, came from
the mixture of buttermilk
and only 1 egg ". . . fried in a
non-stick pan, drizzled with
honey and topped with ber-
ries."
That set me thinking. On a
lazy weekend morning, when
your stomach wails for break-
fast food, you want familiar
items like pancakes and
French toast. Scrambled eggs
and slathers of cream cheese
may be forbidden but there's
a new way around it all. If egg
whites replace most of the
eggs in a recipe, cholesterol
and fat content are slashed
and the addition of other in-
gredients can overcome any
missing "eggy" taste and
texture.
An easy rule of thumb is to
substitute 2 egg whites for 1
whole egg for at least half the
eggs in a recipe. According to
the Egg Nutrition Center, all-
egg whites may be used in
some recipes in place of whole
eggs-if 1 teaspoon oil per yolk
is added. Traditional dishes
such as waffles become more
light and crisp when egg
whites are increased; the
secret lies in the whites
beaten until stiff.
Now, on a weekend, instead
of the predictable bowl of
"healthy" cereal, the whole
family can look forward to
real breakfast food.

BUNNY'S
APRICOT TOAST
Any storebought fancy
bread, labeled low cholester-
ol, may be substituted for ap-
ricot bread.
1 cup buttermilk
1 egg
1 /4 teaspoon vanilla
extract
8 slices apricot bread,
about 34-inch thick
oil for frying
1-2 tablespoons honey
In shallow dish, whisk
together buttermilk, egg and
vanilla. Soak bread slices in
mixture for about 1 minute
on each side. Heat 2 table-
spoons oil in large non-stick
skillet. Fry bread over
medium high heat until nice-
ly browned on each side
(about 2 minutes each side).
Drizzle with honey and serve
with Kiwi-berry Puree.

KIWI-BERRY PUREE
2 kiwi fruit, peeled and
quartered
1 cup fresh ripe
strawberries, halved
1/2 cup apricot preserves
Place kiwi fruit, strawber-
ries and apricot preserves in
food processor. Process with
steel blade to puree, about 2
minutes. Turn off machine
halfway through to scrape
mixture from sides of bowl.
Pour into a bowl and pass to
serve. Makes about 1 1/2 cups.

CRISP PASTA
PANCAKES
8 oz. vermicelli
2 tablespoons olive oil
1 tablespoon hot sauce
1 cup zucchini, coarsely
grated
1 /2 cup diced sweet red
peppers
oil for frying
Cook vermicelli according
to package directions. Drain
well. Turn into medium-sized
bowl and stir in oil, hot sauce,
zucchini and sweet red
pepper. Heat 1 tablespoon oil
