After your Passover meals,
there are a variety of desserts
you can prepare. Here's a
sampling.
BROWNIES
1 /2 box dark brown
sugar
1 /4 cup margarine
2 eggs
1 /2 cup Dutch cocoa
1 /2 cup flour
1 cup shelled walnuts
1 tsp. vanilla

Filling:
2 cups nuts
1 /3 cup chocolate chips
V4 cup sugar
1 teaspoon cinnamon
1 teaspoon almond
extract
Syrup:
1/2 cup honey
3 tablespoons fresh
lemon juice
2 tablespoons orange
juice
2 tablespoons water
Preheat oven to 375
degrees. Place one pastry
sheet on bottom of 8 by 8 by
2-inch baking dish. Trim to
fit. Prick all over with fork
and bake in preheated oven
for 12 minutes. While baking,
prepare filling. Place nuts,
chocolate chips, sugar, cin-
namon and almond extract in
food processor with steel
blade. Chop finely. Spread nut
mixture over partially baked
pastry and cover with remain-
ing sheet of pastry. Trim to
fit. Prick all over and score in-
to serving pieces without cut-
ting all the way through.
Bake 25 minutes longer until
pastry is puffed and nicely
browned. While baklava is
baking, make syrup. In a
small saucepan, heat honey,
lemon juice, orange juice and
water over low heat to com-
bine. As soon as baklava is
removed from oven, pour hot
syrup over. Makes 20 pieces.
Note: Pastry trimmings
may be brushed with beaten
egg or water, sprinkled with
cinnamon and sugar and
baked as cookies.

EXOTIC FRUIT SALAD
2 cups fresh pineapple,
cut in 2x1/2 inch
pieces
1 star fruit, thinly sliced
1 papaya, cut in 1/2 inch
cubes
1 /2 cup canned cream of
coconut
1 /4 cup orange juice
12 whole pitted dates
1 /4 cup pistachios
Combine pineapple, star fruit
and papaya in serving bowl.
Mix - cream of coconut and
orange juice and pour over.
Chill. Before serving, garnish
with pitted dates and sprin-
kle pistachios on top. Serves
8.

Pour wine and honey into a
small heavy saucepan or top
of double boiler. Stir to
dissolve honey.
Whisk egg yolks and sugar
until pale and creamy, about
1 minute. Add to wine mix-
ture. Whisk constantly over
medium heat, or if mixture is
in double boiler over simmer-
ing water, stir constantly
with wooden spoon, until mix-
ture has thickened. Do not
boil or it will curdle. Remove
from heat and cool. Pour into
a serving bowl and sprinkle
with toasted almonds. Makes
about 1 cup.

COFFEE FLUFF
1 tablespoon instant
coffee
1 1/2 cups brown sugar
"5 tablespoons water
2 egg whites, unbeaten
dash salt
Dissolve instant coffee in
the water. Put all ingredients
in top of double boiler over
rapidly boiling water. Beat
constantly with hand or elec-
tric beater until frosting
stands at a peak on beater.
FRUIT-NUT CHEWS
2 cups matzah meal
2 cups matzah farfel
1 1/4 cups sugar
1 teaspoon cinnamon
1 /4 teaspoon ginger
1 teaspoon salt
1 cup chopped walnuts
1_cup raisins
3 eggs, well beaten
3 /4 cup peanut oil
1 /2 cup mashed ripe
banana
Combine matzah meal,
farfel, sugar, cinnamon,
ginger, and salt. Stir in nuts
and raisins. Beat eggs, oil,
and banana together very
thoroughly. Beat into dry
mixture very thoroughly.
Drop by teaspoonfuls onto
well greased cookie sheets.
Bake in a moderate oven
(350°F) 20 minutes or until
browned. Makes about 50.
