RASPBERRY FUDGE
CAKE
1 /2 pound (2 sticks)
margarine
Y3 cup cocoa
1% cup sugar
1 teaspoon vanilla
1 cup chopped nuts
4 eggs
1% cup all-purpose flour
Y3 cup raspberry
preserves
confectioners sugar
(optional)
Preheat oven to 375F. Spray
8x12x2 inch (approx.) baking
dish with non-stick vegetable
spray.
In saucepan, over medium
heat, melt margarine.
Remove from heat and add
cocoa, sugar, vanilla and
chopped nuts. Mix well.
Whisk in eggs and add flour,
about Y2 cup at a time, mixing
well after each addition. Last-
ly stir in preserves, just
enough to swirl through mix-
ture. Pour into prepared bak-
ing dish. Bake in preheated
oven for 35 minutes. Cool and
sprinkle with confectioners
sugar (optional). Cut into
squares and serve with Tipsy
Sauce. Makes 36 pieces.
TIPSY SAUCE
'-/2 cup apple or grape
jelly
1 /4 cup frozen lemonade
concentrate
1 /4 cup red wine
Melt jelly over low heat or
in microwave. Stir in lemon-
ade and red wine and simmer
for 1 to 2 minutes. Pour into
small heatproof pitcher and
pass to drizzle over Raspberry
Fudge Cake. Makes about 1
cup. ❑
