CHICKEN TAGINE
WITH CILANTRO
COUSCOUS
1 pound cooked chicken,
diced
2 tablespoons all-purpose
flour
2 tablespoons sesame or
vegetable oil
1 /2 teaspoon minced garlic
1/8 teaspoon ground
ginger
1 cup mixed dried fruits
4 ribs celery, cut in
1-inch pieces
1 cup thinly sliced fennel
1 large zucchini, sliced
1 /2-inch thick
2 cups apple juice
1 package (10 oz.)
couscous, prepared
according to package
directions
1 /2 cup cilantro, coarsely
chopped
Coat chicken with flour and
fry in hot oil in large skillet.
Add garlic, ginger, dried
fruits, celery, fennel, zucchini
and apple juice. Bring to sim-
mer, cover and cook for 15 to
20 minutes until vegetables
are cooked and dried fruits
are plumped up.
While tagine is cooking,
prepare couscous according to
package directions. Stir in 1/2
cup coarsely chopped cilantro.
Place couscous into a large,
shallow bowl, making a
hollow in center. Spoon
chicken mixture into hollow
of couscous, letting the extra
spill over the sides. Serves 6
to 8.
Note: This may be prepared
with uncooked chicken pieces.
Simply brown chicken in oil
as above. Add remaining in-
gredients, except couscous,
and simmer for 45 to 60
minutes until chicken is done.
Extra liquid may be added
during cooking. Serve as
above.

JERUSALEM TART
1 sheet (approx. 8 oz.)
prepared puff pastry
1 small eggplant, peeled
and thinly sliced
2 small zucchini, thinly
sliced
1 teaspoon minced garlic
V4 cup olive oil
12 cherry tomatoes,
halved
1 /2 cup pitted black olives,
halved
1 teaspoon dried thyme
salt and freshly ground
pepper
Preheat oven to 375F. Line
