Features Michigan's Major Chefs

S

ome of the country's
finest restaurants and
talent comprise a little
known and very unsung fact
. . . they are right here in the
metropolitan Detroit area .. .
And more than two dozen of
the highly-touted culinary
luminaries will soon be
together under one roof.
Imagine four of Michigan's
six master chefs at one place
simultaneously . . . Other
than a food competition, this
could be one of the very rare
times for such a dream
happening.
Occasion is Jan. 20, from 3
to 6 p.m., when the fourth an-
nual "Michigan The Boun-
tiful" gourmet event is held
at the Southfield Civic Center
Pavilion . . . Each of the chefs
and restaurants participating
will feature one of their
favorite items for consump-
tive enjoyment by those
attending.
Master Chef Michael
Russell of Southfield's
Skyline Club at Prudential
Town Center, who will cap-
tain the 1992 United States
Culinary Olympics team is on
tap for the afternoon . . . He'll
be joined by Master Chef
Milos Cihelka, Golden
Mushroom; Master Pastry
Chef Leon Korstjens, Golden
Mushroom and president of
the, Michigan Chefs de
Cuisine Association; and
Master Chef Leopold Schaeli
of Machus, Inc. . . . (The other
two master chefs are Dan
Hugelier, formerly of the Am-
way Grand in Grand Rapids,
who is now consulting, and
Jeff Gabriel, instructor at
Schoolcraft College.)
Outside of the State of New
York, which is home of the
Culinary Institute of America
in Hyde Park, Michigan has
more master chefs than any
other state in the nation .. .
There are only 40-plus master
chefs nationwide.
Also on hand will be chef
Brian Polcyn of Pike Street in
Pontiac, runner-up at the re-
cent Paul Berceuse Gold Cup
competition in Chicago, who
will be travelling to Lyon,
France, for the international
competition this year . . . and
Chef Jimmy Schmidt, Rat-
tlesnake Club's winner of
numerous culinary awards.
People in the restaurant in-
dustry know that Michigan is
noted worldwide for its
culinary arts . . . Last year at
the International Culinary

Olympics in Frankfurt, Ger-
many, the world's largest and
most prestigious competition,
Michigan's team was the only
one in the world with a
perfect "gold record" . . . It
received 13 gold awards for 13
entries and of those, three
achieved a perfect score .. .
For their efforts, Michigan's
team took home the interna-
tional grand prize in the gold
competition with a record un-
matched by any other.
There are more than 160
restaurants located in
Southfield, a number of
whose establishments and
chefs rank among the coun-
try's finest . . . Nearly half of
the restaurants participating
in "Michigan the Bountiful"
number four are Southfield
located.
Participating establish-
ments read like a blue
chip list of fine dining
. . . London Chop House, Rat-
tlesnake Club, Golden
Mushroom, Bijou, Les
Auteurs, Detroit Athletic
Club, Excalibur, Pike Street,
Sebastian's, Tango's Euro-
pean Bistro/Bouquets at
the Radisson Plaza in
Town Center, Hogan's, Jac-
ques Demers at Embassy
Suites, MacKinnons, Machus,
LeMetro, Musashi, Pearl City,
Charley's Crab, Garden Court
of Southfield Marriott Hotel,
and others . . . Also Taste of
Seasons, Savino Ice Cream,
etc.
Five-hundred people were
at the first "Michigan the
Bountiful" . . . over 1,000 are
expected to attend number
four . . . It is an elegant after-
noon offering . . . with semi-
formal garb requested.
The event is sponsored by
the City of Southfield in con-
junction with the Michigan
Chefs de Cuisine Association
. . . Proceeds benefit the
association's scholarship fund
for culinary arts students .. .
Tickets are $35 in advance
(through Jan. 18) or $40 at
the door . . . Advance tickets
are available in person at
Southfield City Hall during
business hours, or at the
Parks and Recreation
Building evenings and Satur-
days . . . Checks should be
made payable to "The
Michigan Chefs de Cuisine
Association."

belt of a very proud Michigan.
CONGRATS ... to brother
Marvin Raskin . . . on his
birthday.
WHAT HAS chocolate
mousse got to do with a holi-
day fiesta? . . . Absolutely
nothing except in the case of
Crosswinds Mall's recent
fund-raiser for Cystic Fibrosis
Foundation, its popular
restaurant, Medallion, proved
to all that Americanized
dessert goes good with Mex-
ican fare.

Four master chefs
will be at Michigan
the Bountiful.

The Laxa family at
Medallion, Dr. Antonio, Dr.
Avelina and their son Pierre,
and Chef Matthew
Chuchman, made enough
chocolate mousse with
raspberry puree and chopped
pistachios for over 700 people
. . . How much was left? . . . A
big zero.

Brothers Scott and Michael
Goodwin, sons of Lea and
Murray Goodwin, didn't plan
it that way . . . neither knew
of the other's intention .. .
but both gave engagement
rings on New Year's Eve ..
Scott took the finger of
Kristin Fazakas, daughter of
Mary and Albert Fazakas .. .
and Michael did the ring
scene with Jodi Mangen,
daughter of Elayne and Bob
Mangen.
PAUL TOOTIKIAN, ex-
ecutive chef at Cafe Cortina,
Italian dining spot owned by
Rina and Adriano Tonon on
10 Mile east of Orchard Lake
Road, has been selected as
one of the chefs who will cook
for the cast and executives of
Bette Midler's forthcoming
movie, Four Fellows . . . Its
10-day filming began Jan. 7
on location in Los Angeles.

FOURTH ANNUAL

Spring Break '91, by
Michigan Cancer Foundation,
is set for the Florida breezes
of Feb. 22, 23 and 24 . . . Fri-
day 7 p.m. cocktail party will
be hosted by Dale and Don
Austin and Nancy and Lloyd
