BEEF BURGUNDY PIE
1 1/2 pounds beef chuck,

trimmed of fat
/4 cup all-purpose flour
1 /4 teaspoon each salt and
pepper
1 teaspoon paprika
3 tablespoons oil
1 bay leaf
1 cup beef stock
1 cup burgundy wine
1 cup frozen artichoke
hearts
2 medium onions, cut in
chunks
1 recipe shortcrust
pastry, chilled (see
above)
Cut beef into 1-inch chunks.
In a bowl, mix flour, salt, pep-
per and paprika. Toss beef in
flour mixture to coat com-
pletely. Heat oil in large
skillet (preferably non-stick)
and add beef. Brown over
high heat. Add bay leaf, beef
stock, wine, artichokes and
onions. Reduce heat to sim-
mer, cover and cook for 1 hour
until beef is tender. Spoon in-
to 1 1/2-quart baking dish and
cool slightly. Preheat oven to
400F.
Roll out pastry 2 inches
larger than top of pie dish.
Place over filling and trim to
fit. Re-roll pastry trimmings
and cut a narrow strip (about
1 /2-inch wide) to fit around top
outer edge. Moisten pastry
strip, place around edge and
press lightly. Cut several
slashes for steam to escape.
Bake for 15 minutes in pre-
heated 400F oven. Reduce
heat to 375F and bake 15 to
20 minutes longer until crust
is golden. Serves 6.

RUSSIAN FISH
TURNOVER
11/2 cups cooked fish in
chunks (such as
haddock or cod)
1 /4 cup grated cheddar
cheese
3 anchovies, chopped
2 tablespoons pickle,
chopped
1 tablespoon capers
1 hard cooked egg, thinly
sliced
1 recipe cream cheese
pastry, chilled (see
above)
Preheat oven to 400F. In a
bowl, lightly mix fish with
cheese, anchovies, pickles,
capers and hard cooked egg.
Set aside. Roll out pastry in-
to a large circle, about
1/8-inch thick. Spoon fish
mixture over half the pastry
circle and dampen edges of
pastry. Fold over like a turn-
over and press edges to seal.
Crimp with fork. Place on un-
greased baking sheet and
bake in preheated oven for 25
minutes until pastry is
golden brown. Serves 4.
