HOT TUNA PITAS
/4 cup cooking oil
2 cups cubed, peeled
eggplant
1/2 cup chopped onion
1 /4 teaspoon garlic
powder
1/8 teaspoon pepper
1 (3 ounce) can sliced
mushrooms
2 medium tomatoes,
peeled and chopped
cup chili sauce
121/2 ounces chunk light
tuna, drained and
flaked
6 white or whole wheat
pita (middle eastern)
bread, split and
warmed
6 slices mozzarella
cheese
Heat oil in skillet and add
eggplant and onion. Sprinkle
with garlic powder and pep-
per and cook five minutes.
Add undrained mushrooms,
tomatoes and chili sauce:
cover and simmer 15 minutes,
stirring occasionally. Add
tuna; simmer five minutes, or
until heated through. Spoon
mixture into pitas. Top each
with a slice of cheese. Serve
with quartered cucumber
slices and pimento-stuffed
green olives, if desired. Makes
6 servings.

1 teaspoon lemon juice
8 slices bread
4 slices cheese
1 /4 cup butter, softened
Preheat griddle. In a me-
dium bowl, combine tuna,
olives, celery, mayonnaise and
lemon juice. Spread mixture
on four bread slices, top with
cheese slices and remaining
bread. Spread butter on both
sides of sandwiches. Grill
about five minutes on each
side or until browned. Makes
four sandwiches.

Seafood lovers rejoice! Oc-
tober is National Seafood
Month, but tuna is the sur-
prise newsmaker of the year.
The announcement by ma-
jor tuna canners that their
products are now "dolphin
safe" created headlines and
sparked new interest in an
old favorite.
In response to this interest,
and to honor National
Seafood Month, Chicken of
the Sea is offering a free
booklet, called "20 Great
Tuna Recipes." The booklet
offers a wide range of recipes
providing variations on tradi-
tional tuna themes.

The following two recipes

GRILLED CHEESE AND
TUNA SANDWICHES
71/2 ounces chunk light
tuna, drained and
flaked
1 /4 cup pitted, chopped
ripe olives
1 /4 cup finely chopped
celery
1 /3 cup mayonnaise

save this recipe for Passover,
if you like.
13-oz. can of tuna,
drained
1 large carrot, grated
1 medium zucchini,
grated
1 small onion, grated
2 medium potatoes,
grated
3 eggs
matzoh meal
pepper
oil
Mix tuna, vegetables, eggs,
pepper and enough matzoh
meal to hold mixture to-
gether. Form into small pat-
ties. Fry in hot oil on both
sides. Serves 6.

TUNA LOAF
For a quickly prepared
brunch or dairy supper, try
this tuna loaf. Serve with
baked potatoes prepared in
the same oven. (Use small
potatoes.)
13 ozs. tuna
1 can vegetarian vegetable
soup
1 grated zucchini
1 /2 to 3/4 cup bread crumbs
3 /4 cup milk
4 eggs
Mix all ingredients togeth-
er. Put into a greased loaf
pan. Bake at 350 degrees for
about one hour. Serves 4
to 5.
