petitive restaurant down the
street. Customer loyalty is on-
ly as strong as the last friend-
ly meal.
"Since repeat business is
the backbone of the industry,"
says Bernstein, "customers
must be cultivated to the hilt.
Each time a customer walks
out not completely satisfied is
a dangerous occasion for a
restaurant. When we multip-
ly the many consumers who
go away with a frown rather
than a smile, we see the ab-
solute need for improved com-
pensation." . . . (Customers
love efficiency and a smile as
their payback for corning into
a restaurant . . . Food is only
as good as the waitperson.)
"Far too many restaurant
employees think that the pur-
pose of the customer is to
please the employee, rather
than vice versa,"notes
Bernstein.
He adds, "People may find
this hard to believe, but it is
not an exaggeration. We have
noted that putting smiles in-
stead of frowns on employees'
faces is a monumental
challenge in Moscow, but it
really is too often a struggle in
the United States."
Bernstein refers to a recent
consumer survey by US. News
& World Report in answering
his own question as to why
customers quit going to a par-
ticular store or restaurant or
cease buying certain products
. . . 1 percent simply die, 3 per-
cent move to another area, 5
percent "develop other retail
friendships," 9 percent begin
shopping or eating at a com-
petitive place, 14 percent
become dissatisfied with the
product offered and the re-
maining 68 percent "quit
because of indifference toward
customers by a dealer or some
employee."

Culinary Team.

States as a finalist in recent
tryouts for the 1992 Culinary
