ow often have you add-
ed a dash of dried
herbs or spices to a
dish only to find little or no
added flavor?
This is exactly what led
28-year-old Corrine Kachig-
ian of New Jersey to experi-
ment and search for herbs and
spices which would not lose
their intensity on the kitchen
shelf. The result is Dilijan
Liquid Spice. The concen-
trates of individual herbs and
spices is certified kosher and
the company guarantees a
two-year shelf life. Since
August 1989, the product has
been. available in local stores.
"It all began in Baltimore!"
says Kachigian. "Four years
ago, while visiting a restaur-
ant there, I ate a dish called
Flounder Oreganato. It was so
delicious, I went home and
tried to duplicate the wonder-
ful taste." At that time,
Kachigian was doing most of
her cooking in a newly pur-
chased microwave and the
results of a fish dish with
dried oregano sprinkled on
top was a disaster. "There was
absolutely no flavor and the
oregano had dried into a bit-
ter dust."
The next step was to use
chopped fresh oregano. Again,
the flavor did not penetrate
the fish. Kachigian, a very
determined lady, wasn't about
to give up. Although employed
as an industrial designer, she
spent long hours after work
experimenting with reduction
sauces from chopped fresh
herbs. Finally, success! She
created a concentrate which
could be brushed over or add-
ed to ingredients using any
cooking method, and impart-
ing a true, fresh flavor.
Kachigian was overjoyed
and enthusiastic "My new-
found method seemed to fill a
gap in the food market. I
thought, people will buy this,
she says, adding "I always
wanted to go into a business
which combined my love of
cooking and eating?'
Corrine Kachigian and hus-
band Steve, a product man-
ager for Beech-Nut Baby
Foods, discussed the idea of
marketing a spray strictly for
microwave cooking. Instead,
they decided to try to produce
extracts to be sold commer-
cially for all methods of
cooking.
After extensive research
and testing with chefs and
food scientists, a process was
developed in which the in-
tensely flavored oils are ex-
tracted from each herb or
spice and extended with
natural soy oil. Kachigian
worked closely on the project,
, even when pregnant with
daughter Talene, now almost
two years old. "I was out ped-
dling and asking questions,
and a few hours after delivery,
I was on the telephone conduc-
ting business from my hos-
pital room!' When the product
was ready for marketing, the ,
Kachigian's named their com-
pany Dilijan after "a charm-
ing little village we stumbled
on when travelling in the
Soviet Union."
Why did a non-Jewish
couple of Armenian descent
insist on a kosher project?
"Caterers and hotels demand
it," says Kachigian. "The
kosher certification is looked
upon as a sign of purity and
good quality. And that's our
goal."
When cooking with these li-
quid spices, I found Kach-
igian's claim of "just like
fresh" to be true. The aroma
and fresh taste is as close to
the real thing as you can get.
Even after three months in
my kitchen cupboard, there is
no discernible loss in flavor.
On a recent snowy after-
noon, I had a wonderful cook-
ing spree. Soups, chilis and
rice were seasoned with these
concentrates. Whether added
at the last minute, at the
beginning or during cooking,
flavors are immediately
released so that taste does not
depend on the cooking time.
Fast Winter Soup, Chili, and
Rice and Peas were the basis
of a couple of hearty meals.
