lox-making kit from Liber-
man Products, you can make
your own.
"The process Liberman Pro-
ducts perfected enabled me to
make lox easily and inexpen-
sively. To be real honest with
you, I didn't think making lox
from a kit could be as easy,
would work or could possibly
taste as good as the lox I buy
at the market. I must admit
'the look, texture and taste of
the lox was excellent — a lit-
tle too salty for my taste, but
still excellent just the same.
"If you're asking what
makes me an expert, well, I'm
not. I'm just a father and hus-
band who enjoys cooking
when I'm not working at my
design business or helping
my wife in her clothing store

tion her store or she said —
well, you know what she
said!)
"All you need to make the
lox is a fresh or frozen piece
of salmon, (I used a fresh
piece from Feldbro Meat and
Fish), a glass or plastic con-
tainer, your refrigerator and
the spices from the Liberman
Products lox kit.
"My first piece of lox was so
salty because I used too much
seasoning (use less than the
chart indicates) and forgot to
soak the lox overnight to
remove the excess salt. The
second try was much better.
The best part of making your
own lox, aside from the enjoy-
ment you'll have, is the sav-
ings. With lox being so expen-
sive these days, the cost in
making your own is con-
siderably less." -
