5. In a separate bowl, beat
the 4 egg whites with the
cream of tartar until slightly
thick. Add the remaining 3
tablespoons sugar, a table-
spoon at a time, and beat
until stiff (the whites will not
slide in the bowl).
6. Fold the beaten egg
whites into the cake mixture
gently, just until blended.
7. Pour into the prepared
loaf pans, sprinkle the tops of
the loaves with the almonds,
and bake at 350 ° for about an
hour or until the cake starts
to pull away from the sides of
the pans.
8. Invert the pans onto a
cake rack to cool completely.
9. Loosen the sides of the
loaves with a spatula and
remove from the pans. Re-
move the wax paper and slice.

CREOLE SAUCE
Serves: 8 (1 slice =
1 serving)
Using salmon, egg whites,
whole grain bread,
vegetables, and even oat bran,
the cholesterol content is just
28 milligrams.
1/2 onion, quartered
1 carrot, quartered
1 small zucchini,
quartered
lh green or red pepper,
seeded and quartered
3 slices whole wheat
bread, crumbled and
soaked in 3 /4 cup
nonfat milk
1 /4 cup oat bran
2 extra-large egg whites
3 tablespoons lemon
juice
2 teaspoons
Worcestershire sauce
1 151/2-ounce can pink
salmon, drained,
bones and skin
removed
2 teaspoons baking
powder

Creole Sauce:

1 15-ounce can sodium-
reduced stewed or
diced tomatoes,
chopped
1 /4 green pepper, slivered
1 tablespoon cornstarch
1. Process the onion, carrot,
zucchini, and pepper in a food
processor until minced.
2. Add the soaked bread, oat
bran, egg whites, lemon juice,
and Worcester sauce. Blend
well.
3. Add the salmon and bak-
ing powder and process just
until combined.
