1/2 c. chopped parsley
1 tsp salt, or to taste
ground pepper, to taste
1 clove garlic, chopped
finely
% c. olive oil
% c. white wine
1 tsp. white wine
1 tsp. dried oregano
1/2 tsp. dried basil
2 c. fresh lemon or lime
juice
Cut the fish filets into
1-inch cubes. Place the
prepared fish in a glass bowl.
Add the onion, peppers,
parsley, garlic, salt and pep-
per. Combine all the ingre-
dients for the marinade. Pour
these over the fish and
vegetable mixture. Marinate
overnight. Makes 10
generous servings.
LENTIL SALAD
VINAIGRETTE
2 c. lentils, carefully
washed
water
salt
1 bay leaf
2 tbsps. olive oil
2 cloves garlic, minced
1 large onion, coarsely
chopped
1 c. carrots, thinly sliced
1 c. celery, chopped
8-10 tbsps. Low-Oil
Mustard Vinaigrette
2 tbsps. chopped parsley
for garnish
Bring 2 quarts of water to
a boil in a large pot. Add the
lentils, salt and bay leaf.
Reduce heat, and simmer un-
til lentils are tender, about 30
minutes. Do not over-cook.
Drain thoroughly.

Meanwhile, heat olive oil in
a medium frypan. Add garlic,
onions, carrots, and celery.
Saute about five minutes and
then add to the lentils. Toss
with Low-Oil Mustard
Vinaigrette. Cover and
refrigerate until ready to use.
Garnish with chopped parsley
if desired. Serves 10.
LOW-OIL MUSTARD
VINAIGRETTE
% c. olive oil
% c. red wine vinegar
% c. water
1 tsp. salt
1 clove garlic, chopped
finely
1 tbsp. prepared mustard
(like Dijon)
freshly ground black
pepper to taste
Combine all ingredients in
a jar. Shake well. Let the
flavors blend at least one half
hour before using. Makes 1
cup.
