Gingersnap Crust
1 lb. cream cheese
1 c. canned pumpkin
3 eggs
1 c. brown sugar, packed
2 tbsp. flour
1 tsp. cinnamon
Y4 tsp. ground ginger
Y4 tsp. nutmeg
1 tsp. vanilla or Grand
Marnier
Sweetened
whipped
cream, to garnish
1. Prepare and microwave
crust as directed. Unwrap
cream cheese and place in a
2 quart microsafe bowl. MW
uncovered on MEDIUM (50%)
for 1 minute, until softened.
Do not wash bowl.
2. Steel Knife: Combine all
ingredients except whipped
cream. Process with several
on/off turns to start, then let
machine run until mixture is
smooth, about 30 seconds. Do
not insert pusher in feed tube.
Pour mixture into the 2 quart
bowl. MW uncovered on
HIGH for 5 to 6 minutes, stir-
ring twice. Mixture will be
hot and thick like pudding.
Pour into crust.

dish 1/4 turn at half time.
When done, the centre 2" will
jiggle slightly like cellulite
when you shake the dish, but
won't stick when touched
with your finger. Cheesecake
will firm up as it stands.
4. Let stand directly on
countertop for Y2 hour to cool.
Chill 3 to 4 hours or overnight
before serving. Garnish with
swirls of whipped cream.
Yield: 8 to 10 servings.
Keeps 3 to 4 days in the
fridge. Crust softens slightly
when frozen.
