with wax paper.
2. MW on HIGH for 7 to 8
minutes, until tender, turning
chicken over and re-
arranging at half time.
Remove chicken from
microwave. Pour cooking
juices into a Purox 2 cup
measure. Add additional
chicken broth to make % cup
liquid. Sprinkle chicken
lightly with salt & pepper.
Cover to keep warm.
3. Dissolve cornstarch in
cold water. Stir into chicken
broth. Add lemon juice, sugar,
soya sauce, ginger and garlic.
Mic well. MW uncovered on
HIGH for 2 minutes, or until
mixture is bubbly and thick.
Stir once or twice during
cooking. Add salt & pepper to
taste. Pour over chicken. (If
necessary, reheat uncovered
on HIGH for 1 to 2 minutes.)
Serve over fluffy white rice
with asparagus or broccoli.
Yield: 3 to 4 servings.

ORIENTAL FILLETS
& SNOW PEAS
Snow peas cook tender-crisp
in the same amount of time
as the fish, so they can be
cooked together. The carrots
must be partially cooked
before adding them to the fish
since they have a longer cook-
ing time.
1 lb. snapper or sole fillets
1 /2 lb. snow peas
1 clove garlic, minced
1 tbsp. butter or margarine
1 c. julienned carrots
1 /2 tsp. minced ginger
1 /4 tsp. pepper
2 tbsp. soya sauce
1 tbsp. cornstarch
% c. cold water
L Pat fish dry with paper
towels. Place in a single layer
in an ungreased microsafe
casserole. Tuck thin ends
under so fish is fairly uniform
in thickness. Remove ends
and stringy part from the
seam-edge of snow peas.
Rinse under cold running
water; pat dry. Place on top of
fish.
2. Combine garlic and but-
ter • with carrots in a 2 cup
Pyrex measure. Cover with
vented microsafe plastic
wrap. MW on HIGH for 2 to
3 minutes, until tender-crisp.
Spoon butter and carrots over
fish. Sprinkle with ginger,
pepper and soya sauce. Cover
with vented plastic wrap.
3. MW on HIGH for 6
minutes, or until fish barely
flakes when gently pressed
with your fingertips. (Rotate
casserole 1/4 turn halfway
through cooking.) Let stand
covered while you prepare the
sauce.
4. Dissolve cornstarch in
water in a 2 cup Pyrex

measure. Add cooking juices
from fish and mix well. (Pour
the juices into the cup
through the vented opening
in the plastic wrap. If sauce
seems light in color, add a
little more soya sauce.) MW
uncovered for 2 to 2 1/2 min-
utes, until thickened and bub-

bling. Stir once or twice dur-
ing cooking. Pour sauce over
fish and vegetables. Serve
over rice or noodles.
Yield: 3 servings. Do not
freeze.

WILD RICE
1 c. wild rice
21/4 c. water
salt & pepper, to taste
1 tbsp. butter or margarine
1. Rinse wild rice; drain
well. Combine wild rice and
water in a 2 quart round
microsafe casserole. Cover
with casserole lid and MW on
HIGH for 6 to 7 minutes, un-
til boiling.
2. Reduce power to MED-
IUM (50%) and MW for 25 to
30 minutes, or until most of
grains have burst. Let stand
covered for 10 minutes. Drain
any excess liquid; add salt,
pepper and butter.
Yield: 4 servings.

SHIPWRECK
2 medium onions, sliced
2 potatoes, peeled & sliced
salt, pepper, garlic powder
& paprika, to taste
11/2 lb. lean ground beef
% c. rice
2 stalks celery, sliced
3 medium carrots, sliced
2 c. chicken broth
1. Layer sliced onions and
potatoes in an ungreased 2
quart round microsafe casser-
ole. Sprinkle lightly with sea-
sonings. Spread meat evenly
over potatoes; season lightly.
Top with rice. Spread celery
and carrots over rice. Season
once again. Pour broth over
casserole.
• 2. Cover with casserole lid
or vented plastic wrap. MW
on HIGH for 12 minutes.
Rotate casserole 1/4 turn. MW
on MEDIUM (50%) 45 min-
utes longer, rotating casserole
1 /4 turn twice during cooking.
Let stand covered for 10 to 15
minutes.
Yield: 4 to 6 servings.
Reheats well.
