Chocolate-covered matzah is a tasty Passover treat.

Chocolate Glaze
6 tbsps. Passover cocoa
2 tbsps. margarine or oil
1 tsp. vanilla (optional)
1 cup powdered sugar
2 tbsps. boiling water
Cream the margarine into
the cocoa. Add the powdered
sugar and vanilla. Add the
boiling water and beat until
smooth. Makes about 1. cup,
enough to glaze the top of the
brownies.

Chocolate
Covered Matzah
6 ozs. Passover semisweet
chocolate bits

1 tbsp. margarine
6 slices matzah
In a small saucepan, heat
the margarine with the
chocolate bits. Use a low fire,
taking care not to burn the
chocolate. Using a spatula,
spread, while hot, over the
matzah. When the chocolate
has cooled on the matzah,
stack between layers of wax-
ed paper. Use about 1 ounce
of chocolate per slice of
matzah.
Alternate method: If you
can't find Passover chocolate
chips, make the glaze given in
the Passover Brownie recipe.
Spread as directed above. ❑

means a lot of time in
the kitchen. Cut down
cooking time by using your
microwave. Following are
some holiday recipes that are
quick and healthful as well.

Orange-Sauced
Chicken
1 small onion, thinly sliced
1 /4 cup thinly sliced celery
2 medium carrots, thinly
sliced
4 boneless chicken breast
halves, skinned
1/2 tsp. Kosher-for-Passover
seasoned salt
1/8 tsp. pepper
paprika

/4 cup orange juice
1 tbsp. grated orange rind
or orange zest
*1% tbsps. potato starch
1 tbsp. brown sugar
2 tbsps. honey
1 tsp. lemon juice
3 cups (1-inch pieces) fresh
asparagus
Arrange onion, celery, car-
rots and chicken in a 12 x 8
microproof baking dish. Cover
with vented plastic wrap.
Microwave on high 8 minutes,
rotating dish once; drain.
Sprinkle with salt, pepper
and paprika. Mix orange
juice, potato starch, brown
sugar, honey and lemon juice
together in a 2-cup microproof
measure. Microwave on high,
uncovered, 2 to 2 1/2 minutes or
until mixture boils, stirring
once. Pour over chicken.
