Honey And Apple Recipes Are Holiday Tradition

L'Chayim will print a kosher recipe
that the whole family can prepare
together. To contribute to the

which the entire family can

This month's recipes were
contributed by Barbara Press of
Southfield (Honey Cake) and Jan
Freedman of West Bloomfield (Apple
Cake).
Honey Cake
flour, 1 1/2 tsp. baking powder, 1 tsp.
baking soda, 1/2 tsp. each cinnamon
and allspice, 1/8 tsp. ground cloves,
4 eggs, 1 cup sugar, 2 tbsps. salad
oil, 1 cup honey, 1/2 cup brewed
black coffee, 2 tbsps. brandy or
wine, 1/2 cup chopped walnuts.
Let one of the older children sift
the flour, baking powder, baking
soda and spices together and set
aside. Mom can beat the eggs
gradually, adding the sugar. Beat
until thick and light in color. Beat in
the oil, honey, coffee and brandy or
wine.
Dad can stir in the flour mixture
and nuts and mix until blended.
Mom can pour into 2 greased and
floured 9x5x3" loaf pans (or one
9x13" pan). Bake in 350 degree
oven for 50-60 minutes or until cake
tester comes out dry. Cool in pans
10 minutes and remove cakes to
wire racks to complete cooling.
Apple Cake
Have the children gather the
ingredients for the cake: 6 eggs, 1
cup oil, 2 cups sugar, 2 cups cake
meal, 2 tbsps. potato starch. Have
another child gather the ingredients
for the filling: 3 lbs. sliced apples,
juice of one lemon, 3/4 cups sugar, 2
tbsps. cinnamon. Topping
ingredients include 1/2 cup chopped
nuts and sugar and cinnamon to
taste.
Mom can preheat the oven to
350 degrees. Dad can beat the
eggs, add the sugar, oil, cake meal
and potato starch. One of the older
children can combine the filling
ingredients.
Mom can divide the batter in
half, spreading half in a greased
9x13" pan. Place the apple filling
on top. Spread the other half of the
batter over the apple filling. The
younger kids can sprinkle the
topping mixture over the top of the
cake. Mom can put the cake in the
oven to bake for one hour.
The children can gather the
ingredients: 3 1/2 cups all-purpose
