ing. Using the foil as an aid,
transfer the strudel to a jelly-
roll pan, placing it seamside
down. Brush the top of the
strudel with butter. Make a
second strudel by repeating
the entire process with the re-
maining filling and phyllo
pastry.
Bake the strudels in the
preheated 375-degree oven for
40 to 45 minutes or until
lightly golden. Cool in the
pan on a rack for about 20
minutes. 'Ib serve the strudels
immediately, transfer them to
a serving platter, and cut
with a serrated knife. (To
freeze, cool the strudels com-
pletely; then wrap them well.
Partially thaw them in the
refrigerator or microwave;
then reheat them in a
350-degree oven for about 35
minutes or until heated
through.)
Makes 2 large strudels;
about 16 or more servings.

BLINTZ KUGEL

Over the years, this easy
recipe of Susan Sperling's
became so popular that she
generously printed up copies
on her computer to give out.
It has an almost cake-like top-
ping and is delightfully rich,
making a small piece quite
satisfying.

Batter:
• 1/2 cup sugar
• 2 large eggs
• 1 cup flour
• 1 tablespoon baking
powder
• 14 cup milk
• 1 teaspoon vanilla
extract
• Pinch of salt
• 1/2 cup butter or
margarine, melted and
cooled
Filling:
• 2 large eggs
• Y2 cup sugar
• 1 pound cream cheese
• 1 pound cottage cheese
• Juice from 1 lemon

For the batter, mix together
all the ingredients except the
butter; then stir in the melted
until completely combined.
For the filling, mix together
all the ingredients.. Pour half
the batter into a lightly
greased 9- x 13-inch Pyrex
baking dish (or equivalent).
Spoon the filling on top; then
pour the remaining batter
over the filling. Bake in a
preheated 350-degree oven for
1 hour or until puffed and
golden brown.
