• 2 whole eggs
• 3 extra egg yolks
• 1/2 cup sugar
• 1/2 teaspoon vanilla
extract
• Pinch of salt
Combine the whole eggs
and egg yolks, and beat with
an electric mixer at high
speed until light. Gradually
add the sugar, and beat until
very creamy and pale yellow.
Beat in remaining ingre-
dients. Put a heaping table-
spoon on top of each cup of
freshly brewed, hot coffee.
Makes about 15 servings.

AYRAN (CHILLED
YOGURT DRINK)
This recipe, adapted from
Cookbook of the Jews of
Greece
by Nicholas
Stavroulakis, is more health-
ful and refreshing than the
previous one, though it might
not appeal to as many people.
• 4 cups chilled plain
yogurt
• 1% cups ice water
• Pinch of salt
• Finely chopped fresh
mint (optional)
Beat the water into the
yogurt, then add the salt
and mint (if desired). Serve
chilled, over ice if desired.
Makes about 5 1/2 cups.

GREEN AND WHITE
"LASAGNE"
I recently devised this easy
recipe because my two older
sons love spinach gnocchi, but
preparation of the little balls
of chopped spinach and ricot-
ta cheese had become too
time consuming for me with
a new baby in the house. This
"lasagne" freezes well, and
individual portions can be
easily reheated in a micro-
wave oven. It cuts into neat
squares and is perfect for a
buffet meal.

Pasta:
• 8 lasagne noodles
Filling:
• 1 15-ounce container
ricotta cheese (use
part-skim, if available)
• 2 7Y2-ounce packages
farmer cheese
• 1/4 cup Italian-style or
seasoned dry bread
crumbs
• 4 large eggs
• 4 ounces shreadded
mozzarella cheese
• 1A cup grated Parmesan
(or similar) cheese
• 2 10-ounce packages
chopped spinach,
thawed and well
drained
• 1/2 teaspoon grated
nutmeg
• 1/4 teaspoon salt (or to
taste)
