This recipe is from
cookbook chairperson Leslie
Tayler, who seems to have
done a great job of coordin-
ating cooks from three dif-
ferent Frederick women's
groups, and who also con-
tributed some of her own ap-
pealing recipes.
% c. red wine vinegar

1/2 c. salad oil
1 clove garlic, crushed
11/2 Tbsp. sugar
1 tsp. salt
2 tsp. tarragon
4 drops Tabasco
1 bay leaf
1 tsp. marjoram
1 onion, sliced into rings
1 lb. fresh bite-sized
mushrooms"

this interesting recipe which
should be perfect to serve on
a hot summer day. It is just
one of Ms. Bader's may offer-
ings which number among
my favorites in the cookbook.

4 c. cold water
11/2 c. sugar
1 /4 tsp. ground cinnamon
3 c. fresh or canned sour
red cherries, pitted
3 c. fresh or canned sweet
black cherries, pitted
2 Tbsp. lemon juice
1 c. red wine
V4 tsp. dried dill
1 /4
tsp. ground white
pepper
2 Tbsp. water (at room
temperature)
1 Tbsp. arrowroot

In
a
medium-sized
saucepan, combine all the in-
gredients except the tepid
water and arrowroot. Bring to
a boil over medium heat. Par-
tially cover the saucepan and
reduce the heat to low. Sim-
mer for 1 hour.
In a small bowl, combine
the arrowroot and tepid
water. Stir well. Stir the mix-
ture into the soup and turn
the heat up to medium. Con-
tinue stirring until the soup
begins to bubble. Reduce the
heat to low. Simmer the soup
uncovered for 2 minutes. Pour
the soup into a glass bowl and

chill for at least one hour.
Serve cold. Serves 8.
COOKIE'S EASY
SPINACH LASAGNA
I have often successfully
made lasagna with uncooked
noodles by adding extra water
to the pan and tightly cover-
ing it. But I have never before
seen a printed recipe calling
for this technique. This ver-
sion comes from Cookie
Radbill.

1 lb. ricotta or small curd
cottage cheese
11/2 c. shredded mozzarella
cheese
1 egg
1 pkg. frozen chopped
spinach, thawed,
drained
3 /4 tsp. oregano
1 large (29 oz.) jar spaghet-
ti sauce
1/2 pkg.
(uncooked)
lasagna noodles
1 c. water

In a large bowl, combine
ricotta, 1 cup mozarella, the
egg, spinach, and oregano. In
greased 13x9x2 baking dish,
layer 1/2 cup sauce, V3 noodles
and half of cheese mixture;
repeat. Top with remaining
sauce. Sprinkle 1/2 cup re-
maining mozarella. Pour
water around edges. Cover
tightly with aluminum foil.

There is no need to cook
noodles ahead of time. Bake

at 350 degrees for 1 hour and
15 minutes, or until bubbly.
Let stand for 15 minutes
before serving.

EASY CHOCOLATE
CHIP MONDEL BREAD
This recipe, which put me in
the mood for mondel bread,
comes from Ida Ruck.

3 c. flour
1 c. sugar
3 /4 C. margarine
1 tsp. vanilla
Dash lemon juice
(optional)
4 eggs
1 tsp. baking powder
6 oz. pkg. semi-sweet
chocolate chips
About 1/2 c. chopped nuts
(optional)
3 Tbsp. sugar
1 Tbsp. cinnamon

Blend sugar and margarine.
Add vanilla. Add alternately:
eggs, flour, baking powder.
Mix in chips and nuts. Place
on a lightly greased cookie
sheet in three rows 1Y2 inches
wide 4 1 inch thick and mold
into three long loaves.
Sprinkle with a mixture of
sugar and cinnamon. Bake at
345 degrees for 30-35 min-
utes. Gets lightly browned.
Don't overcook. While hot, cut
into slices of desired width.
