closely interwoven with the
life and land of the Jewish
people. One need not look far
in the Bible to find that the
land promised by God was "a
land of wheat and barley and
vines and fig trees and
pomegranates, a land of olive
oil and honey." It's likely
that the earliest "honey" was
a thick date syrup, but there
were plenty of wild bees buz-
zing around the caves and
fissures in the dry limestone
rocks making honeycombs
oozing with honey.
Honey is mentioned most
often as a metaphor for the

the psalmists, whose obvious
enjoyment of the delicacy is
apparent in such verses as,
"How sweet are thy words to
my taste, sweeter than honey
to my mouth," and "'My son
eat thou honey because it is
good and honeycomb which is
sweet to thy taste." This mes-
sage held good thrdugh the
centuries; in the Middle Ages
children's slates were covered
in honey and they licked the
letters to taste the sweetness
of the Torah. Later on in
Europe, young students di-
pped their fingers in honey
before learning the holy
words.
The most famous honey
story in the Bible refers to
the riddle Samson asked the
Philistines after he saw bees
making honey in the carcas
of a lion. Out of the eater
came forth meat and out of
the strong came forth sweet-
ness." After devious threats
to Delilah they answered
"What is stronger than a
lion? What is sweeter than
honey?"
Throughout Jewish history
there are references to honey.
In the Talmud, the rabbis
give detailed accounts of bee-
hives and discuss the points
of law concerning the number
of honeycombs a man is per-
mitted to take from a hive
that he acquires only for one
year.
Nowadays, there are some
80,000 beehives in Israel,
strung out in a fragrant line
of orange blossoms from
Nahariya in the • north to
Gaza in the south, in the des-
ert, among the wild flowers of
the Galilee and wherever
