sugar? No one, and that is why
Jane Kinderlehrer has come out
with a new cookie cookbook,
Smart Cookies: 80 Recipes for
Heavenly, Healthful Snacking.
Published by Newmarket
Press (founded by former De-
troiter Esther Margolis), Smart
Cookies looks at making the
confections by using natural in-
gredients. The cookies can be
mixed by hand, blender, mixer
or food processor.

The paperbacked volume, with

illustrations by Claude Mar-
tinot, contains a metric conver-
sion chart, description of ingre-
dients, special cooking in-
structions and an appendix de-
scribing the nutrient value of
the ingredients used in the re-
cipes.
Kinderlehrer is the food editor
of Prevention magazine. Her
previous books include: Confes-
sions of a Sneaky Organic Cook,
How to Feel Younger Longer,
The Art of Cooking With Love
and Wheat Germ and Cooking
Kosher the Natural Way.
What makes the book valu-
able too is that cookie recipes
are designated for specific age
and gender groups, since chil-
dren and adults require differ-
ent vitamins in some cases and
men and women often have
different nutrient requirements.

makes her cookies so special:
"Smart Cookies are dense in
nutrients, each programmed to
do a special job, without the
abundance of fat and refined
sweeteners found in ordinary
cookies. They're rich in the vit-
amin B group to nourish your
nerves and put a sparkle in your
eyes; rich in calcium to
strengthen your bones; rich in
iron for your blood; rich in fiber
to keep your colon healthy; rich
in potassium for your heart; and
chock full of many other nutri-
ents . .."
Following are some sample
recipes from this delightful new
book:
LOVE-IN-BLOOM
FRUIT AND NUT SQUARES
These tasty tidbits give you a
big jolt of potassium, calcium,
and magnesium.
2 cups dried fruits (raisins,
dates, prunes, and figs)
1/2 cup nuts (cashews, pecans,
almonds, or walnuts)
2 tbsps. carob powder
1 tbsp. honey
wheat germ, coconut, or
sesame seeds (about 3 /4
cup)
whole almonds, cashews, or
walnuts for garnish
Chop fruit and 1/2 cup nuts in
food mill, blender, or food proc-
essor. Mix in carob and honey.
Pinch off walnut-sized pieces,
roll them in wheat germ,
coconut, or sesame seeds, and
press into a square. Top each
piece with an almond, a half
cashew, or a piece of walnut.
Yield: 2 dozen. Approximately
55 calories each.

BANANA PECAN
TARTLETS
Bananas become incredibly
sweet when they are frozen,
making it unnecessary to add a
concentrated sweetener. A de-
licious pick-me-up — something
all mothers and mothers-to-be
need!
1 cup mashed banana
'A cup sunflower seeds
3 tbsp. peanut butter (smooth
or chunky)
1 tsp. vanilla
1/2 tsp. cinnamon
pecans and carob chips for
garnish
In food processor, blender, or
mixing bowl, combine banana,
sunflower seeds. peanut butter,
vanilla, and cinnamon, and
blend until ingredients are
well - mixed.

Line the cups of a muffin pan
with paper liners. Place one
heaping teaspoon of the batter
in each. Top some with pecans
and, for variety, some with
carob chips. Place in freezer.
Remove from freezer a few min-
utes before serving. Yield: 12
miniature tarts. Approximately
60 calories each.

MOLASSES
PEANUT BUTTER
ALPHABET LETTERS
The children will be eating
their words and loving every
bite of these delicious morsels,
which provide wholesome nutri-
ents while introducing them to
the alphabet in a most delight-
ful way.
1 egg
1/2 cup blackstrap molasses
% cup peanut butter (smooth
or chunky)
1 tsp. vanilla
1/2 cup carob powder
1 cup whole wheat pastry
flour, minus 2 tbsp.
2 tbsps. soy flour
sesame seeds (about '4 cup)
In food processor, blender, or
mixing bowl, combine egg,
molasses, peanut butter, and
vanilla. Process or mix until in-
gredients are well-blended.
Combine the carob and flours in
a separate bowl and add to the
egg mixture. The mixture will
be the consistency of dough.
Divide the dough in 4 pieces,
wrap in plastic wrap or waxed
paper, and refrigerate for at
least one hour.
Preheat oven to 325 degrees
F.
Grease two cookie sheets with
a mixture of liquid lecithin and
oil, or line them with parchment
paper. Remove one portion of
dough from the refrigerator and
cut it into 12 pieces. Roll each
piece into a 6-inch rope, and roll
each rope in sesame seeds. Place
them one at a time on the
cookie sheets and twist them
into different letters. Repeat
with the rest of the dough, but
save some dough to make the
letters of your child's name.
Bake for 8 to 10 minutes. Yield:
4 dozen letters. Approximately
35 calories each.
