GLAZED CAPON WITH
APRICOT AND
ALMOND STUFFING







Note: A capon is a cas-
trated male, raised for the
purpose of yielding a fat,
meaty and tender chicken.
Weighs 5 to 8 pounds and
costs more than ordinary
roasters.
Wash the inside of capon
and pat dry. Rub cavity with
lemon to freshen and flavor.
Sprinkle with salt and pepper.
Lightly pack the Apricot and
Almond Stuffing into cavity.
Close and secure the opening
with skewers or sew. Brush
surface with melted mar-
garine and roast in a pre-
heated 350 degree oven.
After first 30 minutes, baste
frequently with pan juices and
brush melted apricot pre-
serves over. Cooking time: 25
minutes per pound. If you
prefer to cook the capon,
unstuffed, cooking time is 20
minutes per pound. Serves 6
to 8

APRICOT AND
ALMOND STUFFING
• 1 cup chopped celery

• 1/4 cup peanut oil
• 4 cups matzo farfel
• 1/z cup dried apricots, coarsely
chopped
• 1/4 cup slivered almonds
• 1/4 cup chopped fresh parsley
• 1/4 cup chopped scallions
• 1 egg
• 1/4 cup chicken broth
• 1/4 cup orange juice
• 1 tablespoon grated orange rind
• 2 teaspoons sugar
• 1 teaspoon salt
teaspoon white pepper


Note: Farfel can be made
by coarsely crumbling whole
matzos.
In a large skillet, saute the
celery in hot oil for 1 minute.
Add the farfel and stir till
lightly browned. Add apri-
cots, almonds, parsley and
scallions and set aside. In a
small bowl, beat egg together
with chicken broth, orange
juice, orange rind, sugar, salt
and pepper. Stir into the
farfel mixture and cook over
low heat until liquid is ab-
sorbed. Cool thoroughly
before spooning into the
capon cavity.
This makes enough stuf-
fing for a large capon or a
small turkey, about 8 to 10
pounds. If you prefer, stuf-
fing may be baked separate-
ly. Turn into a well greased
8x8 inch baking dish and
bake at 350 for 35 to 40
minutes. Cover lightly with
foil if browning too fast.
