Hershel's Deli on W. Big Beaver
just east of I-75 in Troy . . . with its
,5700 square feet next to Drury's
Motor Inn.
, Owner is Harold Butler, one of
/ Denny's founders . . . who then
opened the Jojo's group . . . Her-
shel's is the third in what is ex-
pected to be a large chain .. .
Other two eateries are in Califon
laia.
The Troy operation cost over $1
million . . . and looks it . . . seating
154 including seven-seat counter
. :7*-. in a breathtakingly gorgeous
atmosphere of gleaming white,
black and gray tile, black wood
around dark burgundy booths,
black carpeting with small white
pattern . . . Walls graciously
'adorned with art deco paintings,
half drapes softly covering win-
'clews onlooking Big Beaver .. .
and a ceiling giving the '40s and
50s look.
Imagine . . . most of the restau-
rant was shipped in by pieces from

. . . put together in a

Therefore, Original Irving's, or
Irving's on Greenfield, north of 11
Mile, can survive without former
owners Rose and Irving Guttman.
All that new owner Allen
Cohen needs is the right combina-
tion . . . and he may have found it
now with Detroit-born Tom Pip-
kin who has quickly become gen-
eral manager . . . Tom has the res-
taurant experience necessary to
put pieces together properly in
what might have been an un-
workable jig saw puzzle.
He was district manager for
Denny's in Orlando, Fla. seven
years . . . ran a chain of sandwich
restaurants in Ft. Lauderdale,
Orlando and Longwood, Fla. . . .
and most of all, a delicatessen
here before leaving for Florida in
1974. •
Al took over a very successful
operation on Feb. 6 . . . and Tom's
purpose is to retain or even up-
grade the Original Irving's con-
cept.
Many of the world's best chefs
are responsible for prize pupils
who learn the master's creativity
. . . and can perform with equal or
close dexterity . . . Rose Guttman
has few peers when it comes to
Jewish-style cooking . . . and was
a good teacher of Terry Selman,
who watched with eagle-eyed ag-
gressiveness in learning what she
could . . . We tasted the stuffed
pepper made by Terry
and it was a carbon copy.
Our evening waitress is one of
the finest of all . . . Margo
Thompson . . . very efficient, con-
genial, fast, personable and atten-
tive . . . She's the type of waitper-
son you know will make the meal
even more enjoyable.
Curt Norman, van-dyke'd coun-
terman, is a reliable asset in help-
ing Tom with purchasing at Orig-
inal Irving's.
You must try the cheesecake
. . . The varieties are baked by
Joan Fraut at her Pie Place locale
on Evergreen and 12 Mile in
Country Village Center . . . dee-
lich-us.
Large strides at Original Irv-
ing's are now being made to retain
its image . . . Most of the former
employees are still there . . . and
know how to cope with a suc-
cessful operation . . . Day busboy
Michael Izzard has become a
waitress' clean-table dream . .
he's real good . . . and they ap-
preciate it . . . People don't sit at
messy tables . . . and Mike makes
sure there aren't any.
There seems to be more of a re-
laxed atmosphere at Original Irv-
ing's now that Tom has taken over
as general manager . . . This, my
friends, does so very much to
bring customers back.
That name, Original Irving's,
may be changed.
THERE ARE HAPPY
HOURS and there are Happy
Hours . . . Most of them last three
hours . . . and some look like they
never should have started in the
first place . . . Now comes what
may well be one of the longest
Happy Hours around . . . 11 a.m.
to 7 p.m. . . . With hot hors
d'oeuvres, cold cuts, reduced
drink prices and whatever else
needed to make people happy.
