10 minutes- to dry. Dust with
sugar and serve hot. Can be
served at breakfast or for dessert.

ROMANIAN PANCAKES
3 medium potatoes, peeled
1 medium onion, finely chop-
ped
3 tbsps. olive oil
1 pound fresh spinach
3 large eggs, beaten
1/2 tsp. turmeric
% tsp. cumin (optional)
1 1/2 tsps. finely chopped garlic
Salt and pepper to taste
Oil for frying
Boil potatoes until tender;
drain and mash. Saute onion in
olive oil until soft and glazed.
Wash and dry spinach
thoroughly, removing the stems;
chop fine. Add to the onions and
cook, stirring, for a minute or two.
Place in a large bowl and stir in
remaining ingredients. If mixture
is dry, add another egg.
Heat oil in a large frying pan;
add mixture by spoonfuls to form
3-inch pancakes. Fry until golden
on both sides. Garnish with to-
mato wedges. Serves 6 to 8.

Dough
1 cup vegetable oil
1/2 cup water
1/2•tsp. salt
% cup grated Swiss or kaseri
cheese
3 to 4 cups flour
In a large bowl, combine oil,
water, salt and cheese and mix
well. Add flour gradually until a
soft dough is formed. Let rest.10 to
15 minutes.
Select filling and combine in-
gredients.
Pinch off a ball of dough the size
of a small egg. Very gently, flat-
ten and roll into a round 4 inches
in diameter. Place a level table-
spoon of filling in the center. Fold
the dough over the filling to form
a half moon. Seal the edges shut
by pressing down all the way
around the curved edge, then form
into a puffy crescent.
Place on an oiled baking sheet.
Sprinkle with additional grated
cheese, and bake for about 35
minutes in a preheated 350 de-
gree oven until golden brown.
Serve at room temperature.

SESAME BISCOTCHOS
3 large eggs
1 cup sugar
1 /2 cup oil

41/2 cups flour
1 egg yolk, beaten
Sesame seeds
With an electric mixer, cream
eggs, sugar and oil. Add baking
powder and mix well. Add orange
zest and juice and beat mixture
together thoroughly. Add flour Y2
cup at a time. When flour is to-
tally incorporated, turn dough out
onto a lightly floured surface;
dough should be supple and easy
to roll out. Roll out to 1/4-inch
thickness with a floured rolling
pin; slice into squares. Brush top
with the egg yolk and press wet
surface into sesame seeds. Place
cookies on a well-oiled baking pan
and bake 20 minutes in a pre-
heated 350 degree oven. Makes 2
dozen.

Farm team for
Project Renewal
Ashkelon (JTA) — The British
Olim Society, which has since
1948 helped British and Irish olim
find their niche in Israeli society,
has become one of the top training
grounds for Project Renewal vol-
unteers.
Last year, some 600 volunteers
from the two countries worked on
Project Renewal programs in
Ashkelon and in other disadvan-
taged towns and villages
throughout Israel, according to
Marty Davis, the Brooklyn-born
director of the society's Ashkelon
office. Many of the volunteers, se-
eing their talents and energy bear
fruit in the Jewish state, have de-
cided to make Israel their perma-
nent home, Davis said.

can Association of Jewish Homes
and Housing for the Aging will be
one of the participants at the 1985
International Conference on
Jewish Communal Service in
Jerusalem next summer.
