FLASHBACK, popular

in Sheraton-Southfield
Hotel March 19-
31.
NATURALLY, the first
thing considered at monthly
meeting of Michigan Chefs
de Cuisine is dining . . . 125
members and guests we-
ren't disappointed at their
Sheraton-Oaks meeting .. .
with dinner prepared by
then new member, Remy
Berdy, hotel's executive
chef and his staff.
It was what one would ex-
pect at a gathering of people
whose lives are centered
about food . . . Creamy
morel mushroom soup, as-
sorted pates (including the
luscious goose liver pate
made at Raphael's by Chef
Keith Famie and staff, with
curnberland sauce), lemon
sole Rebecca, named after
Remy's daughter (filets
wrapped, stuffing of
spinach, mushrooms and
shallots, sherry laced,
served with mushroom dill
sauce), grapefruit sorbet
with slice of grapefruit,
entree of sliced, tenderloin
with sauce perigourdine,
miniature assorted vegeta-
bles, brioche and croissants
made at the Sheraton-Oaks
. . . and in European fash-
ion, endive salad complet-
ing the meal.
Sweet table was a big hit
. . . with absolutely lu-
scious, sinful pastries made
by Mark Grosz, formerly
head chef at La Francoise in
Chicago, and now at
Elizabeth's as his contribu-
tion for good friend Chef
Remy.
Sakes forbid I should
forget the wines served
... Chateau La Croix de
Pietat white Bordeaux,
1982 . . . and red Cabernet.
Sauvignon, 1982, Cotes
De Provence F. Ravel.
Aside from the excellent
food and superb service by
some of the finest waitres-
ses around, was a presenta-
tion of slides from Sol
Rossman's trip to Paris (in-
cluding McDonald's) .. .
showing elegant restau-
rants and foods.
Sol graduated Wayne
State University in 1946
and never seems to have left
. . . He has been teaching
over 20 years . . . a French
professor at Wayne, in-
terested in French restau-
rants for many years plus
French culinary arts . . . Sol
assists chefs in their cook-
ing and deciphers menus.
He and 15 members of the
Michigan Chefs de Cuisine
will go on an 11-day trip to
France, sponsored by
Schoolcraft College of. the
MCDC Culinary Arts Pro-
gram there . . . Dinners and
luncheons will be at major
established restaurants in
Paris and Lyon . . . Sol and
the others will also meet the
chefs and visit their kitch-
ens.
The trip is scheduled for
May 14-24 . . . Restaurants
being visited will be .. .
Paris: La Ferme St. Simon,
Le Clodenis, Faugeron,
L'Archestrate, La Brasserie
Lipp . . . Lyon: Alain
Chapel, Troisgros, La Mere
Blanc.
