6 tbsp. corn oil
2 lbs. meat (beef, veal or dark
turkey cut into 1 inch cubes)
2 tsp. salt
1 /2 tsp. white pepper
1 medium eggplant thinly
sliced
2 medium onions, chopped
4 tomatoes, chopped
2 green peppers, chopped
2 stalks celery, chopped
small can mushrooms,
drained
Heat 3 tbsp. oil in a skillet.
Brown the beef in it. Sprinkle
salt and pepper on the meat. In
a greased casserole, arrange
meat and vegetables in layers.
Sprinkle remaining oil on top.
Cover and bake for 1 1/2 hrs. at
350 degrees. Remove cover
and bake 15 minutes longer or
until meat is tender. Serves
5-6.
