Brand Cream Cheese
1 cup Parkay Margarine
1 1/2 cups sugar
1 1/2 tsps. vanilla
4 eggs
21/4 cups sifted cake flour
1 112 tsps. baking powder
3/4 cup well-drained chopped
maraschino cherries
1 /2 cup chopped pecans
1 /2 cup finely chopped pecans
1 1/2 cups sifted confectioners'
sugar
2 tbsps. milk
Combine softened cream
cheese, margarine, sugar and
vanilla, mixing until well
blended. Add eggs, one at a
time, mixing well after each
addition. Gradually add 2 cups
flour sifted with baking pow-
der; mix well. Combine cher-
ries and chopped nuts with
remaining flour; fold into bat-
ter.
Grease a 10-inch Bundt or
tube pan; sprinkle with finely
chopped nuts. Pour batter into
pan. Bake at 325 degrees, 1
hour and 20 minutes. Cool 5
minutes; remove from pan.
Cool thoroughly. Glaze with
mixture of confectioners'
sugar and milk. Garnish with
cherries and nuts if desired.
To Make Ahead: Bake cake;
wrap securely in moisture-
vapor proof wrap. Freeze.
When ready to serve, thaw at
room temperature for 24 hours
in moisture-vapor proof wrap.
