breast of veal and breast of
chicken with spices that
brought out the desired
taste-tingles . . . and Cum-
berland sauce of Dijon mus-
tard, orange and lemon
juices, very fine pieces of
their peelings, fresh shal-
lots and Port wine . . . so
very elegant . . . Cumber-
land is an English sauce
used a great deal for game
dishes.
